I hope your Easter was a blessed one, friends. We had such a lovely weekend…a ton of family time, endless fun for the kiddos and food galore.
Ham was on the menu over here and I know for many of you, as well. So in an effort to simplify your meal plans for the week, lets find a way to use up that leftover ham in 5 Simple, Delicious Weeknight-Worthy Meals!
1. Ham + Swiss Frenchbreads
First up, here is a new recipe for you. These gooey goodies have this crazy mustard-maple sauce lathered on the bottom and are topped with diced ham and shredded swiss. The bread gets crunchy and golden around the edges and the filling as sweet, salty and gooey as all get out. So easy-I hope you enjoy them!
Heres how they go:
French Bread, Ciabatta or any Semi-Soft Baguette, sliced in half lengthwise
1/4 Cup Dijon Mustard
1/4 Cup Pure Maple Syrup
Diced Leftover Ham
Shredded Swiss or Gouda Cheese
Preheat oven to 400. Hollow out some of the dough from the insides of the bread to make a small well. Whisk the dijon and maple syrup together and then drizzle desired amount on the hollowed out bread. Fill the well up with ham and then top with swiss cheese. Bake until cheese is bubbly and bread begins to crisp around the edges.
2. Cauliflower, Broccoli and Ham Gratin
An oldie but goodie. It’s basically my take on “scalloped ham and potatoes” and it is guaranteed-veggie-consumption-status for non-veggie lovers.
Yum. Just yum.
4. Zucchini, Tomato and Goat Cheese Frittata
Just add leftover diced ham to the tomatoes and zucchini when you are sautéing them. I mean, who doesn’t love breakfast for dinner? A definite favorite of mine.
5. Chicken Sausage and Summer Corn Chowder
Swap the chicken sausage for leftover diced ham. The flavors are bright and fresh and it’s still so comforting. Summer corn isn’t available around here so I use frozen kernels this time of year. Super quick, super delish.

Ham is a staple food here in the Philippines every Christmas. Because of this, we have ham-inspired meals for January. I will surely try these next time! 🙂
