Happy New Year! It’s been a while, friends, and while I have thought about you so very often, I have just been way too busy eating to check in with you. I mean this pregnancy thing really couldn’t have come at a better time. Christmas. New Years. Holiday gatherings galore. It all amounted to more yummy food than I can explain. And then there’s the fact my oven was broken for nearly a month. You guys, ONE MONTH. Do you know how long that is? I mean I get it, be grateful for what you have, I try so hard. But my oven?! Take my hot water. My coffee. My contact lenses. But for the love, don’t take my oven! I’ve got a thing for a good ham and bean soup. It’s old school. A staple. Nostalgia central. It’s like a really fantastic, super old pair of Chuck Taylors, or that worn in sweatshirt with all the holes in it. Solid. Legit. Classic. Always in style. So this recipe? My jam.
I’ve tried simmering this stuff on the stove for hours. I’ve soaked the beans overnight. I’ve used beans from a can. I’ve seared the ham before slow cooking it. I’ve added roasted garlic. The list could go on. I’ve fussed around with ham and bean soup in every way, shape or form and this ridiculous, itty bitty, hardly-any-work-or-ingredients recipe is by far the best I have done to date. Continue reading

If you’re down with cheesy, gooey, comforty goodness this ones for you. Adult devoured and kid approved around here. I like this recipe because of its simplicity…there are very few ingredients and it requires very little work. The sauce and veggies cook together which makes clean up a breeze and the ham is precooked which saves crazy amounts of time. And an extra thumbs up in my book because theres no cream of anything soup and no flour for thickening. A wonderful dish to ring in the cool fall days ahead…was that the fastest summer ever, by the way? Ill take fall any day of the week…bring. it. on. apples…pumpkins…stews…gratins…oh my!!
