The big game is approaching. So while I actually have no idea who is playing or where the Super Bowl is taking place, I think I’ve got your back in the food department. And that’s worth something, right?
These wings are replayed around here again and again. I always keep a container of the dry rub to have on hand so getting these in the oven is such a cinch.
They are sweet, smokey and have the perfect crisp crust…Every one of us goes into devour mode when they hit the table. Throw them in a serving dish with bleu cheese dressing and fresh cut veggies and you can call one perfect meal!
Our Favorite Chicken Wings
1/3 Cup Coconut Sugar or Brown Sugar
1 Tablespoon Smoked Paprika
2 Teaspoons Garlic Powder
2 Teaspoons Onion Powder
2 Teaspoons Kosher Salt
1/2 Teaspoon Black Pepper
3-4 Pounds Chicken Wing Sections
3 Tablespoons Peanut Oil or other high heat cooking oil
Bleu Cheese Dressing, for serving-recipe here
Preheat oven to 450 and line two baking sheets with foil. Place a baking rack inside of each baking sheet and set aside.
In a small bowl combine the sugar, paprika, garlic and onion powders, salt and pepper. Place the chicken wings in a large bowl and drizzle with olive oil. Sprinkle on the spice rub and toss the wings well to ensure they are evenly coated.
Lay wings in a single layer on top of each baking rack. Place in the oven and cook for approximately 35 minutes, or until chicken is cooked through and skin is deep golden brown, nearly charred, flipping halfway in between cooking. Serve with bleu cheese dressing, if desired.

Well, friends, the Vikings lost. While I’m not much of a follower of the NFL, that game was a major deal in our home. Mostly because we were excited to watch our hometown team while having an “appetizer dinner” on the couch….but nonetheless, my heart couldn’t help but break a little for those players. It was a good run, MN!
Our dinner consisted of the worlds largest charcuterie board put together by the kids complete with dips, fruits, meats, chocolate, nuts, the whole she-bang…and this queso dip. This little gem of a queso dip! Continue reading
Well guys, we made it. Happy spring! Yay! You know what this means, right? Warmer days ahead, lots of grilling, playtime at the parks, more daylight, fresh produce starting to make it’s way, and….baby! WHOA BABY!
Any ideas or explanations as to how this pregnancy could possibly be going this quickly are completely welcomed, friends, because I am mind-blown at the whole deal. We are finally getting going on bedroom moving, bunking, storage room cleaning, baby gear inventory-ing…you know, all of that good stuff…we are in the home stretch! How much do you love appetizers? Give them to me for every meal, friends. There’s really nothing like trying a bunch of different small bites. And with the Super Bowl coming up I think these little Enchilada Cups are going to come in pretty darn handy.
We made these just last night for dinner. I wanted to come up with an appetizer recipe to share with you guys that would be just perfect for you to share with friends for Sunday’s big game. I’m pretty sure I accomplished my goal…but turns out they make a pretty stellar dinner, too. My kids devoured them and requested they be added to the “make-often-because-these-are-our-favorite” list, which is pretty much music to my ears. Are you all set for Thanksgiving? Turkeys brining? Recipes ready to rock and roll? We will be hosting my in laws again this year so it will be cozy and quiet…looking forward to a wonderful day with lots of food. When it comes to Thanksgiving dinner I’m a bit of a traditionalist….aside from throwing in a fun, new salad here and there I like to stick to the basics. Classic roasted turkey. Mashed potatoes and gravy. Stuffing. Those are the basics….delicious, dependable, crowd pleasing basics. And then…in my house, there is no such thing as a Thanksgiving meal without Ina’s Spinach Gratin-I die. And a good old fashioned cranberry sauce-can never ever ever get enough. Continue reading
Oh boy. So I’ve got this pretty amazing girlfriend. We are raising same-aged children together. She’s genuine and so caring. Our husbands totally click. We both love to work out. You know, all the good stuff…and it all just works so seamlessly. But heres the kicker: She, too, has a case of ADIDAF (All Day I Dream About Food-it’s a thing-I am living proof). She’s a fabulous cook and she may be the only human I know who loves to eat ALMOST as much as I do 😉 Like, you know, the kind of friend who sends you snap shots of every course at the fantastic new restaurant she is eating at. The kind of friend that introduces you to rare and ridiculously awesome candy that you have never heard of and you basically faint out of pure delight. The kind of friend you are delighted to check out new restaurants with because you know she will appreciate all of it as much as you do. She’s a winner. In so many ways.

Weekend warriors! It’s Saturday! What’s the good word?
We have a whole lot of nothing planned this weekend and I just couldn’t be more thrilled about it.
