Sweet Mango Refresher

I had a sick little boy last week.  Poor guy had a super sore throat and it was such a struggle to get him to eat because of the pain.  So thats when this Sweet Mango Refresher was born.  Complete success.

I wasn’t quite sure what to call this one.  It’s like a cross between sorbet, frozen yogurt and a slushy all in one.  My kids call it ice cream.  I call it a bowl of refreshing bliss.  

It’s sweet and juicy tasting and perfect for gobbling up with a spoon.    The truth?  I may have eaten the majority of the pan myself.  Preventative sickness measures I suppose-I mean there are vitamins in here, right?

The ease of this is seriously incredible.  A few simple ingredients is all the recipe calls for and it’s sweetened with real honey so you can feel good about it.   You blend it all together like a smoothie, pour it into a bread loaf pan and freeze it.  And after a few short hours in the freezer it will be ready for scooping and serving.

And now, if summer would just come.  Because I have big plans for this stuff.  Think rum.  Or tequila.  A frozen mango margarita?  YES.  I’ll take two.

Sweet Mango Refresher

Ingredients

2 Cups Frozen Cubed Mango

2 Ripe Bananas

1/2 Cup Fresh Orange Juice

1/2 Cup Plain Greek Yogurt or Coconut Cream

1/4 Cup Honey

Directions

Place all ingredients in a blender and process until smooth.  Pour into a bread loaf pan and freeze until solid.  Remove from freezer a couple of minutes before serving and scoop into bowls with an ice cream scoop.
