You guys. These mothers day commercials that are all over the tube these last couple of evenings? I gush. The tears. The sweetness. Mothers…of children, of students, of dogs, I don’t care who you mother. You deserve the world.
The little hands you hold. The dreams you nurture. The oweies you clean up (and the messes too). The genuine care. The peace you make. The confidences you boost. And the wings you give to fly, so very selflessly. Every single ounce that you give of yourself is beautiful. And such an inspiration.
I am blessed to have so many amazing Mothers in my life. My own mom. My sisters. My aunts. And then theres my mama friends; you know who you are. And I know who you are. You are amazing. You deserve the world. Your children are so fortunate to have you, and so am I…because I could not imagine going through one ounce of my mama journey without you.
So this recipe right here is a PSA for all of you mamas-because guess what? Sometimes mama needs a super simple, ridiculously easy dinner to put on the table. Dads-for the record, you are fully deserving of this one too;)
I have to be honest here. I kind of thought this sandwich was a normal part of every household up until the last couple of times I have made them for friends. In grade school, for hot lunch, we often had ‘hot ham and cheese’ sandwiches on a hamburger bun. But they definitely weren’t ordinary. They were baked in foil, individually, so each sandwich had the perfectly melted cheese and the most amazing slightly-crisp-around-the-edges bun. SO good. So really, thats where this all started. Well, that and maybe a few too many beers one night in my younger days of hosting afterbar parties-but thats grounds for an entirely different discussion.
So, if you have not made these…let me tell you a few things about them. You can assemble them ahead and keep them in the fridge, wrapped in foil, until you are ready to bake them (I told you…PSA!) I’ve made them the night before and they store wonderfully. And they are GOOD. I mean, like, as if you weren’t already mother-of-the-year…your kids will praise you to the moon for these delights.
They are gooey..and salty…and sweet…and saucy…and the croissants get slightly crisped up around the edges while the middle still soft and buttery and flaky.
So mamas..consider this my Mothers Day gift to you (if I could wrap this recipe up in a gold crown with a new pair of shoes I’d much prefer to give it to you that way but this will have to do for now).

Maple Mustard Baked Ham and Cheese Croissants
notes: these really are delicious with regular hamburger buns so feel free to try them that way, too. we just love a good croissant around here so we tend to go that route. they work great with mini croissants as well.
4 Croissants, sliced
1/2 Pound Sliced Ham
2 Cups Shredded Swiss Cheese
2 Tablespoons Mayonaise
2 Tablespoons Mustard
2 Teaspoons Pure Maple Syrup
Open croissants and lay on a work surface. Divide half of the cheese among the bottom of the croissants, top with sliced ham and finish with the remaining cheese.
In a small bowl whisk the mayonnaise, mustard and maple syrup together until well combined.Drizzle the sauce over the tops and put the lids on. Wrap each sandwich loosely in foil (but make sure the edges are sealed). Place foil packets on a baking sheet and bake at 375 for 15 minutes or until cheese is melted and edges of the croissants crisp up just slightly. Serves 4.

I have to say that I am of the opinion that a croissant makes everything in life a little better. But these? These are beyond croissantyness – these are the zenith of sandwiches. I am slavering in a wholly unfeminine way and may have to dive in and make one in the next half hour before I explode with longing!
