4 Ingredient Slow Cooker Chorizo Queso Dip


Well, friends, the Vikings lost. While I’m not much of a follower of the NFL, that game was a major deal in our home. Mostly because we were excited to watch our hometown team while having an “appetizer dinner” on the couch….but nonetheless, my heart couldn’t help but break a little for those players. Slow-Cooker Cream Cheese Chicken Enchilada Cups

SONY DSCHow much do you love appetizers?  Give them to me for every meal, friends.  There’s really nothing like trying a bunch of different small bites.  And with the Super Bowl coming up I think these little Enchilada Cups are going to come in pretty darn handy.

We made these just last night for dinner.  I wanted to come up with an appetizer recipe to share with you guys that would be just perfect for you to share with friends for Sunday’s big game.  I’m pretty sure I accomplished my goal…but turns out they make a pretty stellar dinner, too.  My kids devoured them and requested they be added to the “make-often-because-these-are-our-favorite” list, which is pretty much music to my ears.  And I would feel safe assuming Nick and I could win awards for our ability to consume large amounts of these as well; so stinking yummy! Bacon + Butternut Flatbreads with Balsamic Drizzle

SONY DSCOh boy.  So I’ve got this pretty amazing girlfriend.  We are raising same-aged children together.  She’s genuine and so caring.  Our husbands totally click.  We both love to work out.  You know, all the good stuff…and it all just works so seamlessly.  But heres the kicker:  She, too, has a case of ADIDAF (All Day I Dream About Food-it’s a thing-I am living proof).  She’s a fabulous cook and she may be the only human I know who loves to eat ALMOST as much as I do ;)  Like, you know, the kind of friend who sends you snap shots of every course at the fantastic new restaurant she is eating at.  The kind of friend that introduces you to rare and ridiculously awesome candy that you have never heard of and you basically faint out of pure delight.  The kind of friend you are delighted to check out new restaurants with because you know she will appreciate all of it as much as you do.  She’s a winner.  In so many ways.

Steak Balsamic Summer Panzanella

Well now if this doesn’t scream my husbands name, I’m not sure what does.  This, right here, is one of his very favorite meals…and I have to admit, he has pretty darn good taste.

Lets just start this party immediately, guys.  There’s a lot of celebrating to do, no sense in wasting anyones time.

Parmesan Crusted Zucchini Bites

So I think my family has fully recovered from the zucchini overload that transpired a few weeks ago.  I’ve learned that putting them through the hells of zucchini recipe testing for a couple of weeks actually isn’t too bad of a tactic to get them to completely appreciate all of the other veggies out there.  Lately I’ve been hearing things like We aren’t having zucchini?  We’re having broccoli?  YESSSS!!!  So really, we are all sort of winning here.

But this Parmesan Crusted Zucchini Rounds recipe shouldn’t even technically count as zucchini.  Fried cheese? Now that’s more like it. Continue reading

Baked Shrimp with Tomatoes and Feta

Happy Tuesday, friends!  Nothing like a little healthy ditty like this Baked Shrimp with Tomatoes and Feta to get things moving…and so  quick, to boot!

Again, here, I hail the ripe tomato.  I just can’t stop.  They are so lovely and sweet right now and I want to utilize them in any way I am able before they are no more….what a sad day that will be.

This is such a simple recipe that includes a whole lot of freshness.  The sweet, acidic tomatoes and white wine make just the most perfect, bright, simple sauce for the shrimp; and you better grab some crusty bread for sopping up all of that juice, its a must.   Continue reading
