Ok, so this is basically a result of crap, what am I going to make for dinner? I had chicken tenderloins in the fridge and no plan in sight and, truth is, we all need a ‘recipe’ that really doesn’t call for a recipe at all. Something we can just throw together thoughtlessly with no fuss that we can remember off of the top of our heads. So here she be. Continue reading

One-Pot Southwest Chicken and Rice
Far, far, FAR too often I end up with boneless, skinless chicken breasts in my fridge with no plan in sight. Then, what happens is I avoid them…like the plague. They sort of bore me and man is it easy to fall into ruts of grilling or pasta-ing them. No clue why I continue to put them in my cart at the beginning of the week but I do…likely because they force me to get creative. So the end of the week comes and all I’ve got left in the fridge is those poor little chick-a-dees and a bunch of randomness in the veggie drawer, freezer and pantry to work with. Continue reading

I’m just going to lay it all out there, guys. We’ve talked about that word ‘creamy’. There. I said it. I put it out there. I can not stand the way that word sounds. But it needs to be used. Theres a time and a place…and this, right here, would be it. Continue reading
Maple Mustard Baked Ham and Cheese Croissants

Apple Pie Oatmeal
Breakfasts can get a bit monotonous in my home. This Apple Pie Oatmeal is a favorite of my kids and an awesome way to switch things up from these, these and these breakfast favorites around here.
My four year old named this simple, healthy, quick number “Apple Pie Oatmeal” and for very valid reasons. It’s rich, comforting and has all those wonderful flavors that apple pie has to offer without all of the hassle and useless ingredients. Continue reading
Cinnamon Pear Sauce
So friends, as you may remember, I am a total fan of homemade applesauce. It’s unbeatable…store bought varieties just don’t compare. Not to mention when you make it homemade you’re not stripping away a ton of the nutrients through processing and preserving. I’m just sold on the whole deal, especially considering how simple it is to prepare at home.
Now, theres a couple of kinds of food love, in my book. Theres being a total fan, as I told you I was of the applesauce in the paragraph above. And then theres Hallelujah, over the moon, this-is-out-of-control, party-don’t-stop food love. This Cinnamon Pear Sauce? I would classify it under the latter. Continue reading
