Oh Lordy. Meet my new best friend, you guys. And I’ve got one lousy photo to prove it…ugh, a food bloggers worst nightmare. I contemplated waiting to take more photos and post this recipe after the next time we have it but you know what? I don’t really think its a good idea for me to wait any longer than necessary to hand this one over to you. It’s a weeknight game changer and it tastes like a giant bowl of happiness. Greek Grain + Roasted Chicken Salad
We’ve been loading up on soups, stews and comfort food like crazy people around here. This weather just lends itself to such deliciousness, don’t you think? But geez louise we must switch things up once in a blue moon! This salad-it’s just fantastic for this time of year. It’s still a bit comforting and warm but the flavors are so light and fresh…a combo after my own heart! Continue reading
Weeknight Cheesy Ham and Potato Soup
Happy New Year! It’s been a while, friends, and while I have thought about you so very often, I have just been way too busy eating to check in with you. I mean this pregnancy thing really couldn’t have come at a better time. Christmas. New Years. Holiday gatherings galore. It all amounted to more yummy food than I can explain. And then there’s the fact my oven was broken for nearly a month. You guys, ONE MONTH. Do you know how long that is? I mean I get it, be grateful for what you have, I try so hard. But my oven?! Take my hot water. My coffee. My contact lenses. But for the love, don’t take my oven! I’m happy to report we are back up and running around here..and we were so very happy to have this Cheesy Ham and Potato Soup at home for dinner last night. Continue reading
Bacon + Butternut Flatbreads with Balsamic Drizzle
Oh boy. So I’ve got this pretty amazing girlfriend. We are raising same-aged children together. She’s genuine and so caring. Our husbands totally click. We both love to work out. You know, all the good stuff…and it all just works so seamlessly. But heres the kicker: She, too, has a case of ADIDAF (All Day I Dream About Food-it’s a thing-I am living proof). She’s a fabulous cook and she may be the only human I know who loves to eat ALMOST as much as I do ;) Like, you know, the kind of friend who sends you snap shots of every course at the fantastic new restaurant she is eating at. The kind of friend that introduces you to rare and ridiculously awesome candy that you have never heard of and you basically faint out of pure delight. The kind of friend you are delighted to check out new restaurants with because you know she will appreciate all of it as much as you do. She’s a winner. In so many ways.
And you know what, when you are a food blogger these types of friends come in super handy. Not only is she incredibly supportive of Nourished Peach, she makes a stellar sounding board. For example, our convo last night via text: Continue reading
Spinach and Pancetta Salad with Fried Egg
This salad has been happening since my husband and I were dating. It very well could be the reason he asked me to marry him. And if it is, I am totally okay with that. I will keep feeding him this for better or worse, as long as we both shall live. Of course, as long as he shares with me. Continue reading
Garden Fresh Tomato Basil Soup
What a weekend! Along with some much needed, totally relaxed family time we had a quite a bit of rain around here and it was so cozy. Turned out to be perfect weather for a light, fresh soup. And a giant bowl of Garden Fresh Tomato Basil was just perfection. Continue reading
Baba Ghanouj | Eggplant Dip
Weekend warriors! It’s Saturday! What’s the good word?
We have a whole lot of nothing planned this weekend and I just couldn’t be more thrilled about it. The weather here in MN is feeling a bit crisp and fall like-so as you can imagine, I intend on a cozy cup of coffee this morning with my husband who is [finally] back in town and a couple of kids running around in jammies until we decide what random Saturday adventure we would like to partake in. Man, my kind of day. Continue reading
B.B.T Lettuce Wraps
Monday Monday. Give me allllll the coffee today, friends. You feeling it too? Some Mondays I am so ready to rock into the week…this Monday, totally ready to rock myself back to sleep. Perfect day for a hardly-a-recipe recipe, no?!
B.B.T Lettuce Wraps. Bacon Bleu Tomato Lettuce Wraps. Because you know what? Sometimes I don’t really feel like cooking. And sometimes, even though I don’t feel like cooking, I still feel like eating something yummy.
Baked Shrimp with Tomatoes and Feta
Happy Tuesday, friends! Nothing like a little healthy ditty like this Baked Shrimp with Tomatoes and Feta to get things moving…and so quick, to boot!
Again, here, I hail the ripe tomato. I just can’t stop. They are so lovely and sweet right now and I want to utilize them in any way I am able before they are no more….what a sad day that will be.
This is such a simple recipe that includes a whole lot of freshness. The sweet, acidic tomatoes and white wine make just the most perfect, bright, simple sauce for the shrimp; and you better grab some crusty bread for sopping up all of that juice, its a must. Continue reading
Quick + Easy Garden Fresh Salsa
There really is no excuse not to make this stuff. It takes about as much time as it takes to open up a jar of salsa from the market and, well, I don’t need to tell you how the taste compares, right?
We all know how delicious fresh salsa is. And when the tomatoes, peppers and onions are as fresh and perfect as it comes it really is just the most unbeatable condiment on the planet, in my humble opinion. Gobs of garlicky, acidic, sweet, spicy flavor…yes, please, I’ll go right ahead! Continue reading
