I must begin by saying this is the easiest, most no-fail, fabulously scrumptious vegetable recipe on the face of the planet there ever was forever and ever.
My mom shared this crazy-yummy recipe for Parmesan Baked Potato Halves with me a while back. It’s fabulous-the potatoes come out crispy and so savory. But, because my brain is the most wondering-how-can-this-be-done-differently sort of brain, I had one bite of these potatoes and a lightbulb filled with cauliflower immediately lit up above my head. It was nuts, like in the cartoons, ya know?
We love cauliflower steaks on the grill. We love them roasted with olive oil and seasonings. We love them all sorts of ways. But I’ve always desired a crunchy crust on them…like a solid, fried-cheese sort of crust. So basically, the lightbulb showed me a photo of a cauliflower steak happy-dancing around doing a jig with a big fat old buttery, garlicy fried cheese crust on top and I ran with it. Again, just nuts.
So the very next day, before that beautiful vision left my brain, I made a cauliflower version of that potato recipe.
And guess what? That lightbulb was gone…but he passed the happy dance on to me. These are so good you’ll be happy-dance-booty-shakin all day long, friends!
Parmesan Crusted Cauliflower Steaks
Ingredients
1 Head of Cauliflower
4 Tablespoons Unsalted Butter
1 Clove Garlic, grated or pressed
1/4 Cup Grated Parmesan Cheese
1/4 Teaspoon Kosher Salt
1/4 Teaspoon Black Pepper
1 Tablespoon Olive Oil
Directions
Preheat oven to 400. Clean cauliflower and pat dry with a towel. Trim as much as the green leaves off the cauliflower as you are able to, while still keeping the stem in place. Slice the head of cauliflower lengthwise into thick steaks (you will get about 4-6 depending on how big your cauliflower is).
Melt butter and garlic in a saucepan over medium heat. Pour the butter/garlic mixture into a large baking dish and spread it around to ensure it evenly coats the bottom of the dish. Sprinkle the parmesan cheese evenly over the butter and then sprinkle on half the kosher salt and half the black pepper. Lay cauliflower steaks evenly flat on in the butter/parmesan mixture and sprinkle the tops with the remaining salt and pepper. Drizzle olive oil over the tops. Place in the oven and bake for 35-45 minutes or until cauliflower is tender. Remove from oven and let sit for at least 5 minutes before removing from the baking dish (this will ensure your cheese crust sticks to the cauliflower). Serves 4+
