Brussels Sprout Gratin


Friends, it is my call of duty in life to get these darn kids to EAT THEIR BRUSSELS! It’s debatable, no? I mean is it really required? Sure they love plenty of the veggies we serve around here, great, fantastic, I’ll take it! But they just don’t do the whole Brussels Sprout deal. They cringe at just the mere sight of them…before even a taste.

But Im a giant fan…and so is Nick…and it has been my 6-year long quest to find a way for these kiddos to see that they really are yummy. We roast them, throw maple syrup on them, butter them to the nines, even shred them and still, nothing. Nada. “Mom, I tried them but I just don’t care for them” is usually the response I get when they are served.

So, it is with great accomplishment and near tears of joy that I present to you the recipe that has done it. They are believers. They are Brussels Sprout believers!  Continue reading

Baby Food: Savory Lentil and Veggie Purée 


Ok mamas, papas and caregivers…can we talk baby food super briefly?

Man am I learning that sometimes you just have to bite the bullet and go the store bought food route which I’m totally ok with..I love all of the healthful options they make these days and it’s so convenient. But here’s my beef…why do these companies feel the need to make everything taste sweet?! Even if those jars have spinach, green beans or peas in them they often times still wind up putting pears or apples in the bulk of the ingredients. I love that my baby is getting veggies “snuck in” to these varieties because of the nutrients. But I also want him to taste savory…and learn how delicious veggies can be in savory form. Simple Roasted Butternut Squash Soup

Heres the deal, you guys.  I’m going to be frank with you.  I am getting lazy.  Like LAAAAZZZZYYYY.  Yes, you can still count on me to get a decent dinner on the table most nights…but man, I’ll find a shortcut.  Now don’t get me wrong..I love a good Sunday spent in the kitchen…but these weeknights are all about saving time.

I feel like life has progressively taken me to this place of minimal effort.  And yes, the weather these days must have something to  do with it, too.  But it used to be, you know, pre-kids, I was putting hours into dinner.  Hours.  Meticulously dicing, pureeing, grinding, whatever it took to make the food absolutely delicious.  Then one kid…two kids..came along and it has gradually shifted from hours of effort to literally strategizing how I can get this meal on the table as quickly as possible.  What shortcuts can I take that wont sacrifice taste?  How can I make this easier, not only for myself, but for you, my NP people…because Lord knows you don’t have the time either, friends.   Continue reading

Spicy Pickled Radishes

So my guess is that we’ve all experienced pickled veggies of some sort, whether from a food truck putting out stellar street food or topped on an entree at an upscale restaurant. I heart pickled ANYTHING. Zingy is just simply the perfect compliment to so many dishes.

Roasted Potatoes with Mustard Vinaigrette + Bleu Cheese

I hope you’re reading this feeling refreshed after a long weekend!  We had a great one that involved so much yummy food and this Roasted Potato Salad with Mustard Vinaigrette +Bleu Cheese was up there on the list.

It’s a fantastic way to doll up potatoes without much work at all.  We paired it with grilled steaks and a green salad and it fit in just perfectly.  It’s wonderful both warm and at room temperature which makes it great for entertaining and it couldn’t be more simple to do. Continue reading

Good old kale.  It’s wonderful.  It’s versatile.  It’s full of so many fantastic nutrients.  The total package.  I’ve always adored it; for salads, wilting into soups and stews and so much more.  But I have got to say this Kale with Lemon Cream Sauce is up there high on my list of very favorite side dishes.
