B.B.T Lettuce Wraps

SONY DSCMonday Monday.  Give me allllll the coffee today, friends.  You feeling it too?  Some Mondays I am so ready to rock into the week…this Monday, totally ready to rock myself back to sleep.  Perfect day for a hardly-a-recipe recipe, no?!

B.B.T Lettuce Wraps.  Bacon Bleu Tomato Lettuce Wraps.  Because you know what?  Sometimes I don’t really feel like cooking.  And sometimes, even though I don’t feel like cooking, I still feel like eating something yummy.

SONY DSCI mean this is so simple it’s silly.  A romaine lettuce leaf filled with smokey bacon and perfectly juicy, sweet, sliced tomato and topped with tangy, rich, decadent bleu cheese dressing.  Not much.  But SO much.  I just love these.  And I kinda thought you might too.

The bleu cheese dip dolloped right on top is the perfect finish for these little hand held yummies.  It’s something I almost always have in our refrigerator…it makes the most perfect veggie dip, sandwich spread, green salad dressing and so much more.  And having it on hand already prepared in the refrigerator makes these lettuce wraps even more of a breeze.

B.B.T Lettuce Wraps


1 Head Romaine Lettuce, leaves cleaned and trimmed

1 Pound Cooked Bacon

2 Ripe Tomatoes, sliced

Cracked Black Pepper

Bleu Cheese Dip, recipe below


Lay romaine leaves flat, fill with bacon, tomatoes, cracked black pepper and a spoonful of bleu cheese dip,  Serves 2-4.

Bleu Cheese Dip


1/3 Cup Full Fat Greek Yogurt

1/3 Cup Mayonaise

2/3 Cup Crumbled Bleu Cheese

2 Teaspoons Apple Cider Vinegar

1 Tablespoon Chopped Fresh Parsley or 1 Teaspoon Dried Parsley

Kosher Salt + Black Pepper, to taste


Place all ingredients in a medium bowl and whisk until combined; season with salt and pepper to taste.  Can be made ahead and stored in the refrigerator for up to 5 days.
