It’s {nearly} the weekend! Hurrah! And I couldn’t think of a better way to send you off than with a recipe that’s great for making on Sundays to gobble up throughout the week…Curry Chicken Salad Lettuce Boats.
I love having something like this in the fridge during the week for quick lunches and it’s such a nice switch from my staple Roasted Chicken Salad I love so much. Having it prepared at the beginning of the week is such a life-saver come lunchtime for me.
The problem is that I want to eat it all in one sitting….so good!
Whip up a batch with just a few simple pantry ingredients and you’re set; it just doesn’t get any more simple…and I totally like that.
But team all of those wonderful flavors that the curry powder gives you with sweet-tart dried cherries and a little crunch from slivered almonds…wrap it all up in a crunchy, fresh vehicle like romaine lettuce and it goes from like to love extremely quickly!
Curry Powders can be tricky to purchase. Don’t get me wrong, there are wonderful ones out there, but they take a bit of trial and error to figure out which brand you prefer because they all tend to contain different ingredients. If you are interested in making your own at home, this is an awesome recipe. You can make a big batch and it keeps wonderfully in an air tight container to be used for a variety of dishes. And if you are looking for a good store-bought version, I really love this one from Target; it has great, bright flavor and color, isn’t too spicy for my kiddos and has a ton of health-boosting ingredients in it.
We tend to have either grilled or roasted chicken at least one night a week in our house so on those nights I double the amount of chicken I prepare and save the extras to make this Curry Salad up. Store bought rotisserie chicken can absolutely be used here too, but if you ask me, nothing beats the taste that baked, grilled or roasted chicken at home gives this salad. The way I make the chicken for this Roasted Chicken Salad works just beautifully for this version, too.

Curry Chicken Salad Lettuce Boats
Ingredients
1/2 Cup Mayonnaise
1/4 Cup Sour Cream
2 1/2 Teaspoons Curry Powder
1/2 Teaspoon Kosher or Sea Salt
Pinch of Black Pepper
3 Cups Cooked, Chopped Chicken
1/4 Cup Dried Cherries
1/4 Cup Slivered Almonds
3 Tablespoons Finely Chopped Red Onion
Romaine Lettuce Leaves
Directions
Add the mayonnaise, sour cream, curry powder, salt and pepper to a large bowl. Whisk until well-combined. Stir in the chicken, cherries, almonds and red onion. Can be stored in the fridge for up to 5 days (depending on when you have cooked your chicken).
To serve: Fill romaine leaves with heaping spoonfuls of Curry Chicken Salad, wrap up and eat

I think I’m going to have to put this in my back pocket. I have some Vindaloo Curry I purchased at the Dallas Farmers Market that I love. I’m careful where I use it though as the gentleman who mixed it passed away and his family closed the booth. This looks like a recipe worth using it on.
