So there’s this adorable coffeeshop called Pierce Street Coffeworks in the town I grew up in. Many of our “half days” of highschool ended with lunch at this cute little spot-which, now that I think back, was nearly 17 years ago…what?! Can somebody please recalculate and tell me I’m wrong here?
On top of great coffee the atmosphere was full of art and color…and the sandwiches on the menu were pretty stellar, too. The Nutty Bird used to be my go-to. So so delish. And every year on the day after thanksgiving I use my leftovers to take me back to that place of nostalgia. Oh my is it yummy.
It’s a combination of turkey, cranberries, cream cheese, sprouts and sunflower seeds-hence, the name nutty bird. Pretty clever, no? The components just click so well together-it’s a dream team of sweet and salty and the crunchy, chewy, crispy, soft textures blow me away. Total props to them for this creation-it’s truly a gem.
So, here is my so-very-similar version. My guess is you have all of the ingredients in your fridge right this very minute, beings it’s the day after Thanksgiving and all. Do yourself a favor and go into the kitchen and whip one of these bad boys up-or better yet, take advantage of those chubby fingered people in your home-they are totally capable…
Chances are it will become your new day-after-Thanksgiving-lunch-tradition like it is around here. Quite frankly, I think it might even beat the actual Thanksgiving dinner that precedes it…top notch!
And speaking of leftovers, I’ll also be making this White Chicken Chili for dinner tonight and will substitute the chicken with leftover turkey-what are you using your leftovers for?? Please share, friends!
‘The Nutty Bird’ Sandwich
Ingredients
Whole Grain or Sprouted Grain Sliced Bread (we use this sprouted grain brand)
Prepared Cranberry Sauce
Whipped Cream Cheese
Shredded Turkey
Romaine Lettuce Leaves
Roasted, Salted Sunflower or Pumpkin Seeds
Directions
Spread the cranberry sauce on one slice of bread and the cream cheese on the other slice. Pile turkey, romaine and seeds on top of the cream cheese and top with the slice of bread covered in cranberry sauce.
