When it comes to Thanksgiving dinner I’m a bit of a traditionalist….aside from throwing in a fun, new salad here and there I like to stick to the basics. Classic roasted turkey. Mashed potatoes and gravy. Stuffing. Those are the basics….delicious, dependable, crowd pleasing basics. Cherry Lime Mojito
Well. I’ve been sitting here pondering what to call this recipe. Picture this: my husband and I are both on the couch. I’ve got the laptop, well, in my lap as it should be, and he is reading Lord knows what on his phone. He looks at me: what are you stuck on? Me: I’m trying to figure out what I should call those drinks. Nick: a summer slurpee?
So, theres a couple of reasons I didn’t go for his suggestion. First off, we certainly don’t run a 7-11 out of my kitchen, as much as I love the thought of that. Second, its not 1987. I didn’t just get back from riding my bike to the gas station up the road to spend all of my hard earned allowance on a cherry icey and Big League Chew. This recipe must never be called a Slurpee of any sort. Lets go ahead and give him an A for effort, but clearly I’m on my own with this one.
Thai Chicken Pineapple Kabobs with Coconut Rice
Right here we’ve got a bunch of my favorite flavors all muddled into one fabulous, stand-out meal. The tiny bit of peanut butter in the marinade takes the flavor of this juicy, smokey chicken straight over the top….the pineapple adds the perfect hint of sweet acid and the coconut rice just simply turns this number into a home run. So yum.
Slow Cooker Reuben Melts
When I first moved up to Minneapolis I waited tables at this place. There was a reuben on the menu that they were sort of known for at the time. But it wasn’t like any other reuben I’d ever had. The corned beef was braised. So the results were not a slice of dry beef, but the most tender, pull-apart, juicy bliss. It was basically like a love child between a pot roast and a corned beef brisket.
Fast forward about a bajillion years and here I was, just this past weekend, standing among a St Patricks Day haven at the local market: a giant cooler full of corned beef briskets. Score! Totally trying this reuben thing at home. Continue reading

Pre kids I could’ve won awards for flying by the seat of my pants. Always down for whatever. Always willing to juggle around my days. And top notch at getting side tracked and staying up into the late hours of the evening in order to complete the most important task that needed to be done that day.
