Bacon Wrapped Asparagus + Goat Cheese Bundles

SONY DSCWell guys, we made it.  Happy spring!  Yay!  You know what this means, right?  Warmer days ahead, lots of grilling, playtime at the parks, more daylight, fresh produce starting to make it’s way, and….baby!  WHOA BABY!

Any ideas or explanations as to how this pregnancy could possibly be going this quickly are completely welcomed, friends, because I am mind-blown at the whole deal.  We are finally getting going on bedroom moving, bunking, storage room cleaning, baby gear inventory-ing…you know, all of that good stuff…we are in the home stretch!  Which seems a bit crazy, actually a lot crazy, because I swear I just shared the news yesterday, didn’t I?  My gosh we can’t wait to meet this little one…all four of us.  

So needless to say, I’ve been a bit lazy with the dinner deal lately.  My meal planning has pretty much gone out the window. Yes, I still make a plan for the week, but things come up and quite honestly, what sounds good changes on the daily, so I rarely stick to my plan these days.  But the good news is I’ve still got a fridge full of ingredients to play with on the regular…and this week, those ingredients turned into these bundles of yum.

I mean whats really not to love here?  Balsamic roasted asparagus paired with smokey bacon and gooey goat cheese.  I’ll have seven hundred, please.

These look so elegant and are genuinely one of the easiest side dishes I have yet to make-this one is a definite keeper, guys!  Spring-A-Licious!

Bacon Wrapped Asparagus + Goat Cheese Bundles

Ingredients

1 Pound Asparagus, ends trimmed

1 1/2 Tablespoons Olive Oil

1 1/2 Tablespoons Balsamic Vinegar

6 Slices Bacon (applewood smoked is a favorite around here)

3 Ounces Goat Cheese

Cracked Black Pepper

Directions

Preheat oven to 425 and place a wire rack in a baking sheet.  Place asparagus in a shallow bowl and drizzle with olive oil and balsamic vinegar; toss well to coat.

Lay bacon slices on a work surface.  Divide goat cheese among slices and place it at one end of the bacon.  Divide asparagus evenly among bacon slices and place it in a mound on top of the goat cheese.  Roll the asparagus up in the bacon and place on the prepared rack/baking sheet.  Sprinkle with cracked black pepper and roast for 20 minutes or until bacon is browned and asparagus is tender.  Serves 6 as a side.
