It’s going on repeat..like once a week for sure. The Cilantro Sauce may be used as a meal in itself, with a spoon…you totally have my okay to do that. SONY DSCYou guys, the weather around here has been straight up INSANE…and I mean that in the best way possible!  It’s February.  And we have gone to the park nearly every day for the last week, no joke.  Almost every bit of the snow is melted, the sun has been working overtime and there are literally birds chirping.  Can I get allllll the virtual high fives and happy dances from you!?  So let’s  celebrate this spring-like feeling by eating spring-like…at least until we get hit with that snow storm thats in the forecast for this week. SONY DSCWell guys, we made it.  Happy spring!  Yay!  You know what this means, right?  Warmer days ahead, lots of grilling, playtime at the parks, more daylight, fresh produce starting to make it’s way, and….baby!  WHOA BABY!

Any ideas or explanations as to how this pregnancy could possibly be going this quickly are completely welcomed, friends, because I am mind-blown at the whole deal.  We are finally getting going on bedroom moving, bunking, storage room cleaning, baby gear inventory-ing…you know, all of that good stuff…we are in the home stretch!  Which seems a bit crazy, actually a lot crazy, because I swear I just shared the news yesterday, didn’t I?  My gosh we can’t wait to meet this little one…all four of us.   Continue reading

Now what in the heck was I supposed to call these things, you guys?  They are the most random twist on one of my all-time favorite sandwiches and this name was all that my tired, pregnant brain could come up with.  If you can come up with a better one, please do share.

SONY DSCCan you believe it’s February already?  How is this happening, you guys?  It seems like just yesterday we were in the midst of Thanksgiving preparation, and now, we are full blown into winter and darn near our decent into Spring.  Spring!  I mean I know I’m jumping the gun a bit here…but it will be here before we know it, no?

And that pretty much makes me feel all sorts of crazy emotions.  Because spring equals baby’s arrival…eek!  I can’t even begin to tell you how insanely fast this pregnancy has gone..wow.  I mean we have two trimesters under our belt and one to go; I swear I blinked and here we are.   And while I have seen so incredibly many changes in myself/my body during these last several months, there is positively one thing that has remained constant throughout this entire journey….CITRUS FRUIT.     Continue reading

Baked Shrimp with Tomatoes and Feta

Happy Tuesday, friends!  Nothing like a little healthy ditty like this Baked Shrimp with Tomatoes and Feta to get things moving…and so  quick, to boot!

Again, here, I hail the ripe tomato.  I just can’t stop.  They are so lovely and sweet right now and I want to utilize them in any way I am able before they are no more….what a sad day that will be.

This is such a simple recipe that includes a whole lot of freshness.  The sweet, acidic tomatoes and white wine make just the most perfect, bright, simple sauce for the shrimp; and you better grab some crusty bread for sopping up all of that juice, its a must.   Continue reading

Grilled Chicken Mediterranean Bowls

Summer is officially halfway over you guys.  Each year around this time I seem to begin easing into fall mindset; it’s a  point of bittersweetness thinking about what’s shortly ahead.

School.  Structure.  Less daylight.  Earlier bedtimes.  More responsibility.  And quite honestly, each time around this year, that all tends to sound slightly appealing to me.  As much as I adore our summers here in MN, the fall brings so much wonderful newness.  The scenery is impeccable.  The crisp air and lack of mosquitos are like a dream.  The kids getting into a new routine and their utter excitement about school is so uplifting.  And schedules…you know I love a solid, predictable schedule 😉

But before all of that comes, while things are still warm and sticky and loosey-goosey, please, please, I beg you, do me a favor?  Celebrate these last days of summer in your kitchen and make this dish.  It’s sheer delight; summer at its very very very finest.  And if you have even the slightest love for Mediterranean flavor, this is absolutely for you.
