Confessions.

We had a fabulous night out this past weekend.

It entailed a date with some of my favorite humans.

It entailed trying new beer at this spot.

It entailed so much good food at this spot.

And about a bajillion hysterical laughs that interfered with my ability to say no to that last glass of wine.  Such a good thing at the time.  Such an awful thing after the fact.

But as one of my brilliant dates for the evening noted,  “the juice is worth the squeeze, sweetheart”.

And with a little help from Five Guys, and this melty gooey sandwich, I think I am officially going to be okay, you guys.

Onward and upward, friends….and back to a normal functioning adult I go!  Heres an awesome filler for your menu this week…hope your weekend was fantastic!

Melty Ham and Gouda Toasts

notes:  if you’re looking for a healthy whole grain bread we love this sprouted grain line..available at Target

Ingredients

2 Heaping Tablespoons Prepared Mustard

1 Heaping Tablespoon Mayonaise

1/2 Teaspoon Honey

4 Slices Whole Grain Bread

8 Sliced Deli Ham

1 Tomato, sliced

1 Cup Shredded Gouda Cheese

Directions

Preheat your broiler.  In a small bowl, whisk the mustard, mayonnaise and honey together.  Set aside.

Arrange slices of bread in a single layer on a baking sheet and place under the broiler.  Broil for approximately 1-2 minutes or until tops are just toasted and golden brown.  Flip over and broil for 30 seconds or until very lightly toasted.  Remove from oven.

Generously spread the mustard/mayonnaise mixture on top of the lightly toasted side of the bread.  Arrange the ham on the mustard/mayonnaise mixture, followed by the tomato and top with cheese.  Place back under the broiler and cook for 1-2 minutes or until cheese is browned and bubbly.  Serves 4
