This is an absolute must for your Sunday meal repertoire.  Ina Garten is a complete go-to for me when I need a solid recipe that is no fail.  She never disappoints.  This is a version of her roasted chicken.  I simply add extra veggies to make this a one-pan meal and it comes out positively perfect.  Every.  Single.  Time.  The roasted veggies get caramelized and incredibly flavorful.  My belly would be in heaven just eating the slightly crispy onions alone.  And the chicken?  Well.  Theres a good chance you may never purchase a store-prepared chicken ever again. Beef and Bean Chili

Well, we’ve come and gone from our winter getaway.  Sun, warmth and peace was had and, much to my dismay, winter greeted us back home with a big, fat hello.  Every year we go away around this time.  And every year as we are sitting on the beach the sun soaks all of its optimism into my body. We talk about how the winter will always be so much more bearable if we make it a priority to get away somewhere warm for a short time.  And how we aren’t even sure if we could live in a place so consistently warm all year around.  How much we love the seasons change in Minnesota.   And how our winters are really not that bad.  And then it happens.  The airplane lands back in our home state. Favorite Blueberry Muffins

Guys.  I am not one to push advice on others.  Your toes I will never try to step on.  But do me a favor this weekend.  Sleep until your kids or your dog wake you up.  Stay in your jammies until you absolutely need to get ready for the day.  Watch cartoons or your favorite mindless BRAVO show.  Chill out and try your best to relax (and please include cuddles).  And most definitely….absolutely…positively make these muffins (they pair very well with all of the coziness listed above). Pumpkin Mookies

I apologize in advance for that song sticking in your head for the next 24-48 hours.  Georgia has even been singing it…all day.  Proper, I know.  But listen.  You come up with a better name for a muffin/cookie hybrid and I will change the name of this sweet treat in a heartbeat. Nourished Brownies

Listen, friends.  This recipe right here?  Write it down.  Take a picture.  File it away.  Send it to a friend.  I don’t care what you do but just don’t forget about it.  It’s one of my favorite “back pocket” treats.  Yes, its just a brownie.  Thats rich.  And gooey.  And indulgent.  With no refined sugar.  Or flour.  I know!  And the ease?  I literally let Georgia, my almost three year old, make them herself.  Start to finish.  The mess she makes takes longer to clean up than getting them in the oven.  Your new company-stopping-over-at-the-last-minute staple.  Just make sure you remember what you did with the recipe…they’re going to ask you to share it with them. Savory Beef Stew

Red wine has always been my go to for beef stew…it gives it such a rich flavor.  But as I was putting a pot of stew together this past Sunday I realized we were out of red wine.  And in good old Minnesota there are no liquor stores open on Sundays which left me no option but to try something new…and the only thing  I could come up with that had potential was balsamic vinegar.  Its rich and bold and so savory.  Ill never go back…peace out, red wine.  This is the real deal, right here.  Best beef stew I have ever made. PB and J Crispy Bars

Once upon a time there was a mommy.  And this mommy promised her little girl allllllllll day long that after her nap she would wake up to a wonderful treat of peanut butter crunchy bars with chocolate drizzled on top.  So when the little girl when down for her nap the mommy headed right for the kitchen…she was so excited to eat the peanut butter chocolate treats herself prepare such an awesome treat for her little girl.  She measured and scooped and poured and stirred.  The crunchy peanut butter bars smelled amazing.  And now came the really fun part….the chocolate drizzled on top!  Mommy went to the cupboard to get the chocolate pieces.  But she could not find them.  She looked high.  She looked low. And everywhere in between. She began to sweat. How will I make the peanut butter crunchy bars with chocolate drizzled on top without the chocolate? I know I bought chocolate!   And then she became angry.  Smoke nearly started coming out of her ears.  The mommy had not-so-nice thoughts running through her head of what she wanted to do to the daddy.  She realized the daddy probably ate all of the chocolate pieces because daddy has a problem.  A problem with consuming everything in sight that resembles chocolate in a matter of milliseconds.  He’s like a really friendly chocolate monster.  Mommy decided she was going to get a padlock for her chocolate cupboard.  Not for the little girl or her baby brother but for her daddy.   Continue reading
