Southwest Pulled Pork Soup

It’s amazing.  We’ve been eating this pulled pork for days but our tastebuds would never know.  We’ve had it in these awesome sandwiches I told you about the other day.   We’ve had it hash style with sweet potatoes.  We’ve had it in risotto.  We’ve had it in quesadillas with this simple, delicious guacamole…

But this soup?  It may have topped them all.  It’s so quick to throw together and tastes crazy fresh.  Light but still comforting and tasty tasty tasty.  I think I spent a total of 15 dollars on the pork for the Slow Cooker Pulled Pork recipe and it got us through days of meals.  Winner winner SEVERAL porky dinners.  Please PLEASE comment and share with me your favorite ways to enjoy pulled pork…this may be a new infatuation for me!

Southwest Pulled Pork Soup

Ingredients

2 Tablespoons Olive Oil

1 Cup Finely Chopped Red Onion

1 Medium Red Bell Pepper, finely chopped

1 Tablespoon Chili Powder

1 Teaspoon Ground Cumin

1 Teaspoon Salt

1 (15 Ounce) Can Great Northern Beans, drained and rinsed

1 (10 Ounce) Can Diced Tomatoes and Green Chillies

3 Cups Low Sodium Chicken Stock

1 1/2 Cups Pulled Pork, from this recipe

1 Cup Frozen Corn

2/3 Cup Sour Cream

1/2 Cup Shredded Cheddar Jack Cheese

Cilantro, for garnish

Diced Avocado, for garnish

Directions

Heat a large soup pot or dutch oven over medium high heat.  Add the olive oil and onion and sauté for five minutes or until onions begin to soften.  Add red pepper, chili powder, cumin and salt and sauté another 2 minutes.  Stir in the beans, diced tomatoes and chillies, chicken stock, pork and corn.  Bring to a simmer and cook over medium low heat for 15 minutes.  Add the sour cream and cheese and stir until completely combined and the cheese has melted.  Serve topped with cilantro and diced avocado.  Serves 4+

    1. Hi Sarah..thanks for the note! The site should still work the same for you…are you viewing it on a mobile device or a computer? If you’re on mobile you should be able to scroll all the way to the bottom and there will be a “search” bar to type in what you are looking for..and also a “browse recipes” drop down that will allow you to search by category. In this case you’d choose “pork” and you should find it. If you are on a computer both options will be on the right side of your screen at the top of the page. Let me know if this works..if not, I’m in trouble;)
