Guys. I am not one to push advice on others. Your toes I will never try to step on. But do me a favor this weekend. Sleep until your kids or your dog wake you up. Stay in your jammies until you absolutely need to get ready for the day. Watch cartoons or your favorite mindless BRAVO show. Chill out and try your best to relax (and please include cuddles). And most definitely….absolutely…positively make these muffins (they pair very well with all of the coziness listed above).
They’re healthy, comforting and so very yummy. One of my favorite ways to spend time with my favorite little lady…Just combine your wet ingredients
Combine your dry ingredients and stir them into the wet
Stir in the blueberries
Divvy them up
Bake and devour
Favorite Blueberry Muffins
Notes: Oat flour is available for purchase in most supermarkets. I make my own…it is very simple and cost effective. Just grind up rolled or old fashioned oats in your food processor or nut/coffee bean grinder until they resemble a smooth flour-like texture. I grind large quantities at a time and store them in an air tight container.
Ingredients
2 Cups Oat Flour
2 Teaspoons Baking Powder
1/2 Teaspoon Ground Nutmeg
1/2 Teaspoon Baking Soda
1/4 Teaspoon Salt
1/2 Cup Unsweetened Applesauce
1/4 Cup Greek Yogurt
1/4 Cup + 2 Tablespoons Honey
2 Large Eggs + 1 Egg White
4 Tablespoons Butter, melted and slightly cooled
1 Teaspoon Pure Vanilla Extract
2 Cups Blueberries
Directions
Preheat oven to 350 and line a 12 count muffin pan with liners. In a medium bowl whisk together the oat flour, baking powder, nutmeg, baking soda and salt. In a large bowl whisk together the applesauce, yogurt, honey, eggs+whites, butter and vanilla. Pour the dry ingredients into the wet and stir until combined. Stir in the blueberries. Divide the batter among muffin pan and fill each one about 3/4 full (you may have a tiny bit of batter leftover). Bake for 20-25 minutes or until toothpick comes out clean. Makes 12 muffins
