Slow Cooker White Chicken Chili

I suppose we are due for a Super Bowl friendly recipe, no?  Sunday is the big day-I have no idea who is playing in this game.  I also have no idea where this game is being played. One thing I do know, tho, is that I look forward to the commercials.  And I also know of the perfect recipe to pair with this hyped up event.

White Chicken Chili…that is so damn tasty.  Put all of the ingredients in the slow cooker and your work is basically done.

All that you will have left to do is gobble this up in between plays..or commercials if you’re anything like me…whatever tickles your fancy.

Slow Cooker White Chicken Chili

Ingredients

1 Medium Yellow Onion, diced

4 Cloves Garlic, finely chopped

1.75-2 Pounds Boneless Skinless Chicken Thighs

2 (15 Ounce) Cans Pinto or Great Northern Beans, drained and rinsed

1 (15 Ounce) Can Diced Tomatoes + Green Chillies

1 (4 Ounce) Can Fire Roasted Green Chillies

1 1/2 Cups Chicken Stock

8 Ounces Cream Cheese, softened and diced into cubes

1 Tablespoon Oregano Leaves

2 Teaspoons Ground Cumin

2 Teaspoons Chili Powder

1 Teaspoon Smoked Paprika

1 Teaspoon Kosher Salt

1/2 Teaspoon Black Pepper

Chopped Cilantro, for topping

Shredded Cheese, for topping

Corn Tortilla Chips, for scooping

Directions 

Place the onions and garlic on the bottom of the slow cooker.  Place chicken on top in a single layer.  Add the beans, tomatoes, chillies, chicken stock, cream cheese, oregano, cumin, chili powder, paprika, salt and pepper and cover.  Cook for 8-10 hours on low or until chicken is very tender.  Remove chicken and shred with a fork.  Once shredded stir the chicken back into the soup and season with salt and pepper as needed.  Ladle into bowls and serve topped with cilantro, cheese and tortilla chips for scooping.  Serves 6-8

  1. My son-in-law just gave me a recipe very similar to this last weekend. Only difference he used chicken breast, no tomatoes or cream cheese. It was absolutely delicious. I will definitely make this, I did use 3 cans of northern beans. Smells so yummy too!
