Slow Cooker Cranberry BBQ Meatballs

SONY DSCFriends, it’s all beginning!  Snow.  Elastic pants.  Food overload.  Family time.  The holidays….yay!

Are you all set for Thanksgiving?  Turkeys brining?  Recipes ready to rock and roll?  We will be hosting my in laws again this year so it will be cozy and quiet…looking forward to a wonderful day with lots of food.  When it comes to Thanksgiving dinner I’m a bit of a traditionalist….aside from throwing in a fun, new salad here and there I like to stick to the basics.  Classic roasted turkey.  Mashed potatoes and gravy.  Stuffing. Those are the basics….delicious, dependable, crowd pleasing basics.  And then…in my house, there is no such thing as a Thanksgiving meal without Ina’s Spinach Gratin-I die.  And a good old fashioned cranberry sauce-can never ever ever get enough.   Continue reading

Cherry Lime Mojito

Well.  I’ve been sitting here pondering what to call this recipe.  Picture this:  my husband and I are both on the couch.  I’ve got the laptop, well, in my lap as it should be, and he is reading Lord knows what on his phone.  He looks at me: what are you stuck on?  Me:  I’m trying to figure out what I should call those drinks.  Nick:  a summer slurpee?  

So, theres a couple of reasons I didn’t go for his suggestion. First off, we certainly don’t run a 7-11 out of my kitchen, as much as I love the thought of that.  Second, its not 1987.   I didn’t just get back from riding my bike to the gas station up the road to spend all of my hard earned allowance on a cherry icey and Big League Chew.  This recipe must never be called a Slurpee of any sort.   Lets go ahead and give him an A for effort, but clearly I’m on my own with this one.

Thai Chicken Pineapple Kabobs with Coconut Rice

Right here we’ve got a bunch of my favorite flavors all muddled into one fabulous, stand-out meal.  The tiny bit of peanut butter in the marinade takes the flavor of this juicy, smokey chicken straight over the top….the pineapple adds the perfect hint of sweet acid and the coconut rice just simply turns this number into a home run.  So yum.

‘The Holidays’.  Is it safe to say they are upon us?  I’m going to  go ahead and declare a yay on that.  It is November, after all.  And the hustle and bustle is right around the corner.  I’ll be the first to admit, I love it.  Most of it.

I love it because of the constant gathering around the table with loved ones. People just tend to get together more often, at least in my world.  Whether it’s a group of couples having  a fun dinner out on the town, old friends who are hosting a gathering in an effort to get the ‘gang’ back together, or simply having dinner at other families houses, we just tend to do it more often around this time of year.  And I’m TOTALLY cool with that.
