Breakfasts can get a bit monotonous in my home. This Apple Pie Oatmeal is a favorite of my kids and an awesome way to switch things up from these, these and these breakfast favorites around here.
My four year old named this simple, healthy, quick number “Apple Pie Oatmeal” and for very valid reasons. It’s rich, comforting and has all those wonderful flavors that apple pie has to offer without all of the hassle and useless ingredients.
I don’t particularly love an overly sweet oatmeal, so 2 tablespoons of honey is just right for my taste. If you care to sweeten it up even more, add an extra tablespoon or two of honey to satisfy your tooth. But however you sweeten it, be sure its paired with a cool, cozy morning-it’s a match made in heaven!
Apple Pie Oatmeal
note: if you are not concerned about this recipe being gluten free, feel free to opt for ‘old fashioned’ or ‘rolled oats’ of any kind
Ingredients
1 Tablespoon Unsalted Butter
1 Apple, peeled, cored and diced (use your favorite variety)
1 Cup Gluten Free Rolled Oats
2 1/4 Cups Water
1 1/4 Teaspoons Ground Cinnamon
1/2 Teaspoon Ground Allspice
Pinch of Salt
Directions
Melt the butter in a medium saucepan over medium high heat. Add the diced apple and sauté until apple just begins to soften, about 2-3 minutes. Add the oats, water, cinnamon, allspice and salt and bring to a boil. Reduce heat and simmer, stirring occasionally, for 10-15 minutes or until liquid is absorbed and oats are soft. Serves approx 4.
