Goat Cheese, Spinach + Sun Dried Tomato Pork Rolls

SONY DSC

Those thin little pork loin cutlets you see in your market?  They were made for these.  These rolls look fancy.  They taste fancy.  And they are equally as special for entertaining as they are for a simple weeknight assemble-ahead meal.  Heres how they go: Continue reading

The At-Home Juicy Lucy Burger

SONY DSC

Hello, Friday…so nice to see you!

MN friends.  The Juicy Lucy.  Discuss…

Non-MN friends.  The Juicy Lucy.  Thoughts?  Have you been blessed enough to experience such amazingness?  If you aren’t familiar I’ll give you the lowdown.  It’s a burger thats filled with cheese on the inside.  And a burger thats been owned and treasured by the Twin Cities for as long as I can recall.  You’ve got legendary places like this that have absolutely hit the nail on the head with showing folks how a classic Juicy Lucy is done.  And then there’s spots like this that take the concept of the Juicy Lucy and run with it.  The stuffed cheese is accompanied by things like bacon, caramelized onions, pepperoni, sauces of all sorts, peppers…the list could go on. This Tomato Basil Cream Chicken is the perfect dish for those times when you are wanting yummy tomato flavor but are unable to get your hands on delicious, home-grown varieties.  Store-purchased roma tomatoes are all you need-sounds blah, no?  But let me just tell you how this whole deal works…I’m sure I can convince you to get the “blah” out of your brain… Continue reading

It’s {nearly} the weekend!  Hurrah!  And I couldn’t think of a better way to send you off than with a recipe that’s great for making on Sundays to gobble up throughout the week…Curry Chicken Salad Lettuce Boats.

I love having something like this in the fridge during the week for quick lunches and it’s such a nice switch from my staple Roasted Chicken Salad I love so much.  Having it prepared at the beginning of the week is such a life-saver come lunchtime for me.   Continue reading

Sweet Mango Refresher

SONY DSC

I had a sick little boy last week.  Poor guy had a super sore throat and it was such a struggle to get him to eat because of the pain.  So thats when this Sweet Mango Refresher was born.  Complete success.

I wasn’t quite sure what to call this one.  It’s like a cross between sorbet, frozen yogurt and a slushy all in one.  My kids call it ice cream.  I call it a bowl of refreshing bliss.   Continue reading
