Cherry Lime Mojito

Well.  I’ve been sitting here pondering what to call this recipe.  Picture this:  my husband and I are both on the couch.  I’ve got the laptop, well, in my lap as it should be, and he is reading Lord knows what on his phone.  He looks at me: what are you stuck on?  Me:  I’m trying to figure out what I should call those drinks.  Nick:  a summer slurpee?  

So, theres a couple of reasons I didn’t go for his suggestion. First off, we certainly don’t run a 7-11 out of my kitchen, as much as I love the thought of that.  Second, its not 1987.   I didn’t just get back from riding my bike to the gas station up the road to spend all of my hard earned allowance on a cherry icey and Big League Chew.  This recipe must never be called a Slurpee of any sort.   Lets go ahead and give him an A for effort, but clearly I’m on my own with this one.

Thai Chicken Pineapple Kabobs with Coconut Rice

Right here we’ve got a bunch of my favorite flavors all muddled into one fabulous, stand-out meal.  The tiny bit of peanut butter in the marinade takes the flavor of this juicy, smokey chicken straight over the top….the pineapple adds the perfect hint of sweet acid and the coconut rice just simply turns this number into a home run.  So yum.

Sweet Mango Refresher

I had a sick little boy last week.  Poor guy had a super sore throat and it was such a struggle to get him to eat because of the pain.  So thats when this Sweet Mango Refresher was born.  Complete success.

Nourished Peach Crumble

So you may remember this mess of an experience I had trying to create a solid “crumble” recipe.  It failed.  And that was most definitely not my first and last attempt at getting it right.

But finally, I am satisfied.  I surrender to the fruit crumble madness that has taken over my home.  Which is, likely, a good thing.  My children aren’t too thrilled about it, but any more taste testing of these different recipes and chances are they’d turn into walking, crumbly, fruit humans. Cucumber, Apple and Bacon Salad

This is a fun switch to a classic summer side dish.   Theres so much you can do with this recipe…adding bleu cheese or celery to the mix is wonderful, dried cranberries or cherries instead of apple is pretty delish, too.  But this right here is my favorite variation; crunchy, fresh cucumber, sweet, crisp apple, and smokey bacon make an awesome team paired with the creamy, tangy dressing.   Continue reading
