Favorite Blueberry Muffins

2015.  Say it out loud, it just sounds weird.  2015.  Although it took literally one second to turn from 2014 to 2015 the sound of our new year makes me feel like we’ve taken a ten year leap forward.  2015?  It sounds like the Jetsons could be living next door.  Does it seem a lot more drastic than 2014 to you?  2015.  It screams futuristic and I am unsure of how we have gotten here.  Quite honestly it makes me feel like I should throw all my Apple products and remote controls out the window, revert to a trustee old pen, paper(and my brain) and pretend like time is not going as quickly as it is.  I need babies to stay babies around here.  Toddlers to remain toddlers.  Whats that they say?  The days are long but the years are short?  My gosh it is so very true.  2014 seemed like it was 10 minutes long.  So next time I am complaining that I can’t wait for my husband to get home…or that I can’t wait for the weekend…or that Im tired….or need some quiet time…please remind me of how very short the years are.  That Ill probably never get the cuddles back.  Or the tantrums.  Or the most genuine, innocent I love you, mommy’s.  This new year has begun with so much gratitude around here.  Another healthy, heart-beaming, wonderful year has been had and it’s been such a blessing to share it with all of you.  Heres to wishing you a truly incredible 2015, friends! Savory Chicken Stew

Hello there!  I apologize for my hiatus this last week.  I am fully aware that excuses are useless but things have been a little nutty around here.  My husband has been traveling the last two weeks and our house has been full of all sorts of crazy…and Im totally over this single parenting thing, it makes me so grateful for the time Nick is home.  Holiday parties, Christmas programs, deadlines, croup, first birthdays, family visits, graffiti on bedroom walls (the culprit shall remain nameless but lets just say that it appears that the year of “3” has started off with quite a bang), meltdowns, deviance, weaning and sleepless nights.  But theres still plenty of merriment around here as things are looking pretty darn good right now.  Daddy is hours away from being home.  Empathy seems to have been implemented into that tiny “3” year old body that I swear I didn’t know.  Sleep has been had the last couple nights.  And Christmas is coming!  We are looking so forward to time with family!

Dinners have been consisting of macaroni and cheese, sandwiches and yes….gingerbread houses.  Sometimes you just go with it, I suppose 😉  But Im putting my foot down.  This Savory Chicken Stew is currently simmering on the stove and I just realized I don’t think I have shared this recipe with you guys.  It’s so very comforting and rich…its a favorite.  Simple, healthy and one pot friendly, to boot. Slow Cooker Black Bean and Butternut Squash Chili

Busy busy times are approaching.  Hustle and bustle take over and meal times become as rushed as ever, unfortunately.  This slow cooker chili can help in that department.  Throw all of the ingredients into your slow cooker and let it go while you’re at work or out running. And when you arrive home your left with a hearty, healthy, warm bowl of nums.  We love to scoop this chili up with corn tortilla chips.  Don’t forget the toppings.. they’re essential!  And not to worry…you won’t miss the meat.  My carnivore tendencies were totally satisfied after one bite 😉 Continue reading

I apologize in advance for that song sticking in your head for the next 24-48 hours.  Georgia has even been singing it…all day.  Proper, I know.  But listen.  You come up with a better name for a muffin/cookie hybrid and I will change the name of this sweet treat in a heartbeat. Moroccan Meatball Stew

And so it begins.  Winter.  Snow.  The works.  Business just isn’t as usual around here these days.  Its cold and my laziness begins to sink in.  Some days, taking the extra 20 minutes to get the kids bundled up and out the door just doesn’t sound so appealing so home we stay.  And on those kinds of days, this stew tends to happen.  Its been a very long time favorite of mine.  Super deep, rich flavors and textures galore.  Warmth in a bowl.   I typically make the meatballs in the morning while the kids are playing and keep them in the fridge until I throw the rest together late afternoon; it makes putting the stew together so simple.  And as it simmers the amazing smells soak into every inch of our home…and I always welcome them to stay as long as they would like.  It’s even better leftover, too, but the chances of having leftovers are just not likely.  Serve it on top of brown rice or mashed cauliflower….it’s so incredibly yummy. Listen, friends.  This recipe right here?  Write it down.  Take a picture.  File it away.  Send it to a friend.  I don’t care what you do but just don’t forget about it.  It’s one of my favorite “back pocket” treats.  Yes, its just a brownie.  Thats rich.  And gooey.  And indulgent.  With no refined sugar.  Or flour.  I know!  And the ease?  I literally let Georgia, my almost three year old, make them herself.  Start to finish.  The mess she makes takes longer to clean up than getting them in the oven.  Your new company-stopping-over-at-the-last-minute staple.  Just make sure you remember what you did with the recipe…they’re going to ask you to share it with them.
