Well, we’ve come and gone from our winter getaway. Sun, warmth and peace was had and, much to my dismay, winter greeted us back home with a big, fat hello. Every year we go away around this time. And every year as we are sitting on the beach the sun soaks all of its optimism into my body. We talk about how the winter will always be so much more bearable if we make it a priority to get away somewhere warm for a short time. And how we aren’t even sure if we could live in a place so consistently warm all year around. How much we love the seasons change in Minnesota. And how our winters are really not that bad. Savory Chicken Stew
Hello there! I apologize for my hiatus this last week. I am fully aware that excuses are useless but things have been a little nutty around here. My husband has been traveling the last two weeks and our house has been full of all sorts of crazy…and Im totally over this single parenting thing, it makes me so grateful for the time Nick is home. Holiday parties, Christmas programs, deadlines, croup, first birthdays, family visits, graffiti on bedroom walls (the culprit shall remain nameless but lets just say that it appears that the year of “3” has started off with quite a bang), meltdowns, deviance, weaning and sleepless nights. But theres still plenty of merriment around here as things are looking pretty darn good right now. Daddy is hours away from being home. Empathy seems to have been implemented into that tiny “3” year old body that I swear I didn’t know. Sleep has been had the last couple nights. And Christmas is coming! We are looking so forward to time with family!
Dinners have been consisting of macaroni and cheese, sandwiches and yes….gingerbread houses. Sometimes you just go with it, I suppose 😉 But Im putting my foot down. This Savory Chicken Stew is currently simmering on the stove and I just realized I don’t think I have shared this recipe with you guys. It’s so very comforting and rich…its a favorite. Slow Cooker Black Bean and Butternut Squash Chili
Busy busy times are approaching. Hustle and bustle take over and meal times become as rushed as ever, unfortunately. This slow cooker chili can help in that department. Throw all of the ingredients into your slow cooker and let it go while you’re at work or out running. And when you arrive home your left with a hearty, healthy, warm bowl of nums. We love to scoop this chili up with corn tortilla chips. Don’t forget the toppings.. they’re essential! And not to worry…you won’t miss the meat. Moroccan Meatball Stew
And so it begins. Winter. Snow. The works. Business just isn’t as usual around here these days. Its cold and my laziness begins to sink in. Some days, taking the extra 20 minutes to get the kids bundled up and out the door just doesn’t sound so appealing so home we stay. And on those kinds of days, this stew tends to happen. Its been a very long time favorite of mine. Super deep, rich flavors and textures galore. Warmth in a bowl. I typically make the meatballs in the morning while the kids are playing and keep them in the fridge until I throw the rest together late afternoon; it makes putting the stew together so simple. And as it simmers the amazing smells soak into every inch of our home…and I always welcome them to stay as long as they would like. It’s even better leftover, too, but the chances of having leftovers are just not likely. Serve it on top of brown rice or mashed cauliflower….it’s so incredibly yummy. Continue reading
Savory Beef Stew
Red wine has always been my go to for beef stew…it gives it such a rich flavor. But as I was putting a pot of stew together this past Sunday I realized we were out of red wine. And in good old Minnesota there are no liquor stores open on Sundays which left me no option but to try something new…and the only thing I could come up with that had potential was balsamic vinegar. I write this post for you, baby with the need for good food. I know you are longing for flavor, I can tell. That baby food stuff has got to get old. Mashed bananas. Gritty peas. I do not blame you. I also know that you are sick and tired of every store bought food pouch tasting the same…sweet, like fruit. Sure, they think they are trying to be healthy and tease you by throwing a few veggies into those fruit purees to mask the flavor…but I sit here and laugh with you because they have belittled your beautiful developing tastebuds. I know, I tried telling them…you DO like the taste of savory veggies! How the heck are these people expecting you to experience different flavors and develop a liking for anything other than fruit?!
