Guys…I’m just not sure what to write. What do you want me to say? That this is the most awful burger I’ve ever put in my mouth? That I’d positively never, EVER advise you to eat such a disgrace? That the spicy, creamy sauce is a joke…and that teaming it up with a grilled burger, gooey, rich egg yolk and a juicy tomato is just disgusting? Well thats surely not going to happen. It’s pure heaven in my belly, people. PURE. HEAVEN.
Burger with Over-Easy Egg and Sriracha Sauce
Ingredients
For the Sauce
1/2 Cup Mayo
1/2 Cup Full Fat Greek Yogurt
1 Tablespoon Sriracha
1/4 Teaspoon Salt
For the Burger
1 Small Medium White Onion, grated on a box grater
1 Tablespoon Dijon Mustard
1 Tablespoon Tamari Sauce
1 Pound Ground Beef (preferably 80-85% Lean)
1 Tablespoon Unsalted Butter
4 Eggs
1 Tomato, sliced
Salt + Black Pepper
Directions
For the Sauce
Whisk all ingredients together in a small bowl. Set aside.
For the Burger
Heat grill over high heat. Place the onion, dijon and tamari in a large bowl. Add the ground beef and mix with your hands until all of the ingredients are incorporated. Divide the meat into 4 portions and shape into patties with your hands. Season both sides of the patties with salt and pepper. Place burgers on the gill and grill on the first side for 3 minutes or until they are lightly charred and golden. Flip over and grill for 4 more minutes for medium-rare burgers, longer if you desire them to be cooked more well done.
Heat a large skillet over medium high heat. Add butter and once butter is melted spread it around the pan so the entire surface is coated. Crack eggs into the pan and season with salt and pepper. Cook for 1-2 minutes or until the whites are cooked halfway up the egg. Flip the eggs over and cook for an additional minute. Remove from pan.
Place burgers on a plate. Top with tomato slices, a big dollop of sriracha sauce and an egg. Serve immediately. Serves 4
