Well, folks, my lovely oven is not working…it’s been a sad couple of days.  But you know what?  If my oven is going to go on strike it couldn’t have picked a better week for such a catastrophe.  It’s hot outside.  Like, reeeeaaaaalllyy, really sticky hot.  There is just no way I would be using the oven in this heat, that I can assure you.  So with the heat, and an oven thats waiting for the doctor to arrive, the grill saves the day!

Non-MN friends.  The Juicy Lucy.  Thoughts?  Have you been blessed enough to experience such amazingness?  If you aren’t familiar I’ll give you the lowdown.  It’s a burger thats filled with cheese on the inside.  And a burger thats been owned and treasured by the Twin Cities for as long as I can recall.  You’ve got legendary places like this that have absolutely hit the nail on the head with showing folks how a classic Juicy Lucy is done.  And then there’s spots like this that take the concept of the Juicy Lucy and run with it.  The stuffed cheese is accompanied by things like bacon, caramelized onions, pepperoni, sauces of all sorts, peppers…the list could go on. Tuna Melts

Num.  These are just simply one of my favorites.  They are quick and simple enough to whip up for lunch but special enough to serve at dinner.  And trust me, with all of that flavor and the gooey cheese on top your kids will shock you with how much they love them…just don’t tell them how nutrient-rich they are, it may ruin it for them 😉

Tuna Melts

Ingredients

1 4 Ounce Can of Tuna, drained

1 Tablespoon Mayonaise

1/2 Tablespoon Mustard

1/4 Teaspoon Salt

1/4 Teaspoon Black Pepper

2 Slices Whole Grain Bread (we prefer gluten-free whole grain)

1 Cup Spinach Leaves

1 Tomato, sliced

1/2 Cup Shredded Cheese (we prefer gouda)

Directions

Preheat Broiler.  In a small bowl mix together tuna, mayo, mustard, salt and pepper.  Place slices of bread on a baking sheet.  Lay spinach on top of bread, top with tomato slices, tuna and sprinkle the cheese over the top.  Place in the oven and broil for approximately 2 minutes or until cheese is bubbly and melted.  Serves 2.
