This is something I make fairly often and realized just this week that I have yet to share the recipe with you. You’ll have it on the table in the blink of an eye and it may be devoured just as quickly, too.
This Tomato Basil Cream Chicken is the perfect dish for those times when you are wanting yummy tomato flavor but are unable to get your hands on delicious, home-grown varieties. Store-purchased roma tomatoes are all you need-sounds blah, no? But let me just tell you how this whole deal works…I’m sure I can convince you to get the “blah” out of your brain… Continue reading

I must begin by saying this is the easiest, most no-fail, fabulously scrumptious vegetable recipe on the face of the planet there ever was forever and ever. Continue reading

It’s {nearly} the weekend! Hurrah! And I couldn’t think of a better way to send you off than with a recipe that’s great for making on Sundays to gobble up throughout the week…Curry Chicken Salad Lettuce Boats.
I love having something like this in the fridge during the week for quick lunches and it’s such a nice switch from my staple Roasted Chicken Salad I love so much. Having it prepared at the beginning of the week is such a life-saver come lunchtime for me. Continue reading

How was the weekend? It’s officially spring, friends..congratulations..you’ve made it! I’m feeling awfully grateful that ‘technical’ winter is behind us…now if we could just get these temps (and random bouts of snow) out of the equation.
So with spring comes lighter food, which I am feeling so ready for. You know I’m all about soups, stews and gratins but there comes a point in time when a change of food is in order…and around here our changes in food tend to come and go with the seasons. Continue reading

So this daylight savings time thing. Are you feeling it? Am I crazy {enter VERY loud boom upstairs and a screaming 4 year old…I’ll be right back} Continue reading

When I first moved up to Minneapolis I waited tables at this place. There was a reuben on the menu that they were sort of known for at the time. But it wasn’t like any other reuben I’d ever had. The corned beef was braised. So the results were not a slice of dry beef, but the most tender, pull-apart, juicy bliss. It was basically like a love child between a pot roast and a corned beef brisket.
Fast forward about a bajillion years and here I was, just this past weekend, standing among a St Patricks Day haven at the local market: a giant cooler full of corned beef briskets. Score! Totally trying this reuben thing at home. Continue reading

I like these. I reeeeaaaalllly like these.

This boring old tomato had been staring me in the eye for days and I finally caved. I knew it wasn’t the kind of tomato that was worthy of being eaten alone with a little salt. After all, it is March. But I needed to utilize it in some way. So I sliced it up and away to the oven it went for a roast. Continue reading
I sit here today with a big fat leftover bowl of this on my lap and a giant forkful in my mouth. It’s a good thing this blogging deal isn’t live and in video…you would question so very many things about me; including but not limited to: my upbringing (potentially questioning whether or not I was raised by wolves), if, in fact, I actually feed myself real human food on a regular basis (because the shoveling would lead one to believe genuine starvation could be a factor in this picture) or, if I treated myself to take out for lunch (from a very fresh, hip, homegrown-type of joint). Continue reading
I hope your weekend was filled with so much love, friends! We had a great one…that consisted of much needed time out with friends, a lot of QT with the kids, all things heart shaped, sledding and…the only thing that should ever proceed a sledding experience..hot cocoa! Continue reading
