Savory Beef Stew

Red wine has always been my go to for beef stew…it gives it such a rich flavor.  But as I was putting a pot of stew together this past Sunday I realized we were out of red wine.  And in good old Minnesota there are no liquor stores open on Sundays which left me no option but to try something new…and the only thing  I could come up with that had potential was balsamic vinegar.  Its rich and bold and so savory.  Ill never go back…peace out, red wine.  This is the real deal, right here.  Best beef stew I have ever made. Chicken Coconut Curry Soup

This was an experiment that went rather well.  I posted my idea for this soup on Facebook a few days ago and received so much awesome feedback and so many great suggestions.  It’s always so fun to hear from  you guys…your input helps greatly!  The result?  This soup right here.  So good.  So light.  So fresh.  So savory.  So sweet.  So many textures.  So smooth.  So comforting.  Sign me up for 3 meals a day 7 days a week with this one..this is the epitome of my kind of food. PB and J Crispy Bars

Once upon a time there was a mommy.  And this mommy promised her little girl allllllllll day long that after her nap she would wake up to a wonderful treat of peanut butter crunchy bars with chocolate drizzled on top.  So when the little girl when down for her nap the mommy headed right for the kitchen…she was so excited to eat the peanut butter chocolate treats herself prepare such an awesome treat for her little girl.  She measured and scooped and poured and stirred.  The crunchy peanut butter bars smelled amazing.  And now came the really fun part….the chocolate drizzled on top!  Mommy went to the cupboard to get the chocolate pieces.  But she could not find them.  She looked high.  She looked low. And everywhere in between. She began to sweat. How will I make the peanut butter crunchy bars with chocolate drizzled on top without the chocolate? I know I bought chocolate!   And then she became angry.  Smoke nearly started coming out of her ears.  The mommy had not-so-nice thoughts running through her head of what she wanted to do to the daddy.  She realized the daddy probably ate all of the chocolate pieces because daddy has a problem.  A problem with consuming everything in sight that resembles chocolate in a matter of milliseconds.  He’s like a really friendly chocolate monster.  Mommy decided she was going to get a padlock for her chocolate cupboard.  Not for the little girl or her baby brother but for her daddy.   Continue reading

Veggie Soup Puree

I write this post for you, baby with the need for good food. I know you are longing for flavor, I can tell. That baby food stuff has got to get old. Mashed bananas. Gritty peas. I do not blame you. I also know that you are sick and tired of every store bought food pouch tasting the same…sweet, like fruit. Sure, they think they are trying to be healthy and tease you by throwing a few veggies into those fruit purees to mask the flavor…but I sit here and laugh with you because they have belittled your beautiful developing tastebuds. I know, I tried telling them…you DO like the taste of savory veggies! How the heck are these people expecting you to experience different flavors and develop a liking for anything other than fruit?! Things are getting pretty comical around here. The things that come out of Georgia, my 2 year olds mouth sometimes leaves me speechless. She’s so dang busy, too. Running around the house, all day, mommy I’m going to the store, do you need me to pick you up anything …or, okay class, heres how you do a ballerina. It’s constant, the talking. And poor Jude…the kid will not stand a chance to speak until he is 18 years old and out of the house, I’m afraid. Mediterranean Chopped Salad

If you were looking for us on Saturday, you would have found us sitting on the deck at some of our nearest and dearest’s house…kids playing, adults baby-gushing, wine in hands and the darling hosts feeding us some of the best guacamole on the planet and an awesome burger bar, to boot.  Pretty sure it doesn’t get much better than that.  This salad was my dish to share and it received pretty darn great reviews.
