Grilled Chicken Fajitas

SONY DSC

In honor of Cinco De Mayo I find it only necessary to share with you one of our very favorite “Mexican” recipes.  Grilled Chicken Fajitas.

Your belly will think they are as beautiful as your eyes do, friends.  Smokey, charred, savory chicken loaded with herbs and spices paired with slightly crisp peppers and onions equal magic on my tastebuds. Continue reading

Grilled Broccolini with Lemon and Garlic

SONY DSC

Well, the infamous USB cord has been found.  No, my daughter did not throw it in the trash.  No, my son did not flush it down the toilet. My third child wonderful husband put it in his briefcase.  Because he just assumed it was one of his.  All that garbage digging, brain wracking for nothing, friends.  Sometimes you get the bear and sometimes the bear gets you.  So as promised, here is the recipe for the grilled broccolini we are so crazy about around here.  Its barely a recipe.  It barely takes effort or time.  But its tastes so darn yummy. Roasted Chicken and Vegetables

SONY DSC

This is an absolute must for your Sunday meal repertoire.  Ina Garten is a complete go-to for me when I need a solid recipe that is no fail.  She never disappoints.  This is a version of her roasted chicken.  I simply add extra veggies to make this a one-pan meal and it comes out positively perfect.  Every.  Single.  Time.  The roasted veggies get caramelized and incredibly flavorful.  My belly would be in heaven just eating the slightly crispy onions alone.  And the chicken?  Well.  Theres a good chance you may never purchase a store-prepared chicken ever again. Kale and Shrimp Caesar

IMG_4789

Its not really just a Caesar.  Its a Caesar with some seriously bold, flavorful dressing…thats topped with chewy, sweet sun dried tomatoes….and crispy, crunchy fresh baked croutons….and warm, savory, smokey shrimp.  Its going to seem like a lot of steps but I assure you it is one of the easiest, fastest meals ever.  The dressing is so simple to throw together…and if you have it made ahead of time you’re literally looking at a 15 minute dinner, start to finish.  We love this one. Brussels Sprout and Prosciutto Pasta

SONY DSC

With the short list of ingredients you’d think this dish has nothing to offer.  Throw in the fact that you’ll have it on the table in no more than 20 minutes, start to finish and you may want to just stop reading and get back to your day.  But STOP.  DONT GO.  PLEASE.  Just give me another chance.  Im begging!  Just read one more sentence before you go: Continue reading

Crispy Eggplant Fries with Spicy Yogurt Dipping Sauce

SONY DSC

Like it or not…  I LOVE the way most fried food tastes.  I know, and Im sorry if i gross you out but come on, how do you not?  Fried pickles.  Cheese curds.  Onion rings.  Buffalo wings.  I will now wipe up the pool of drool on my keypad.  So sometimes I need this fix and I try and try in my own kitchen to figure out how to have it in a more healthful way.  These eggplant fries are seriously to die for…and they give me that fried food taste…minus being fried, the grease and icky feeling after eating them. Continue reading

Cauliflower, Broccoli and Ham Gratin

SONY DSC

If you’re down with cheesy, gooey, comforty goodness this ones for you.  Adult devoured and kid approved around here.  I like this recipe because of its simplicity…there are very few ingredients and it requires very little work.  The sauce and veggies cook together which makes clean up a breeze and the ham is precooked which saves crazy amounts of time.  And an extra thumbs up in my book because theres no cream of anything soup and no flour for thickening.  A wonderful dish to ring in the cool fall days ahead…was that the fastest summer ever, by the way?  Ill take fall any day of the week…bring. it. on.  apples…pumpkins…stews…gratins…oh my!! Pulled Pork Sandwiches with Cabbage Slaw

SONY DSC

Well, as promised, here is a follow up to last weeks simple Slow Cooker Pulled Pork recipe.  Although a Pulled Pork Sandwich is one of the more common ways to utilize the pork, this sandwich tastes nothing close to ordinary.  It’s exceptional.  Juicy, tender pulled pork, tangy, sweet bbq sauce and cool, crunchy, creamy slaw?  Theres not much else I can say here, folks..it’s out of this world.  My husband is nuts for this sandwich. Continue reading

Veggie Soup Puree

SONY DSC

I write this post for you, baby with the need for good food. I know you are longing for flavor, I can tell. That baby food stuff has got to get old. Mashed bananas. Gritty peas. I do not blame you. I also know that you are sick and tired of every store bought food pouch tasting the same…sweet, like fruit. Sure, they think they are trying to be healthy and tease you by throwing a few veggies into those fruit purees to mask the flavor…but I sit here and laugh with you because they have belittled your beautiful developing tastebuds. I know, I tried telling them…you DO like the taste of savory veggies! How the heck are these people expecting you to experience different flavors and develop a liking for anything other than fruit?! Yes, fruit is good for you. But veggies? Vital. So important for your precious little body and brain. So, squishy baby, I write this for you. Continue reading
