Nourished Banana Bread

This is the good stuff, right here, friends. Our very favorite banana bread recipe. Now, I must warn you.  This recipe contains no refined sugar.  No gluten or crazy “healthy flour blend” that you need to go buy.  And chances are, if you utilize any of my “baking” recipes you already have all of these ingredients sitting right in your freezer or pantry-they are my baking “staples”.

My kids beg for more. My friends are shocked that a sweet treat that’s typically packed full of unhealthful ingredients can actually be transformed into something they can feel good feeding their kiddos for breakfast.  This, right here friends, is why I love to cook.  Because it really is possible to turn traditional favorite recipes into more nourishing versions…and this banana bread recipe is the perfect display of just that. I hope your family enjoys this one as much as we do!

Nourished Banana Bread

*note: you can purchase pre made oat flour, but it’s a piece of cake to make your own:  just place  rolled or old fashioned oats (gluten free for a GF version) in a food processor or blender and process until it becomes a fine, flour-like texture.

Ingredients

1 1/4 Cups Gluten Free Oat Flour

1/4 Cup Flax Meal

1/4 Cup Almond Meal

1 Teaspoon Baking Soda

1/2 Teaspoon Salt

3 VERY Ripe Bananas, mashed *about 1 1/2 cups

6 Tablespoons Unsalted Butter, melted and slightly cooled +more for greasing the pan

1/4 Cup Honey, Pure Maple Syrup or Agave Nectar

2 Eggs, lightly beaten

1 Teaspoon Pure Vanilla Extract

1/2 Cup Chopped Walnuts, optional

Directions

Preheat oven to 350 and grease a 9×5 inch loaf pan with butter.  Place the oat flour, flax meal, almond meal, baking soda and salt in a medium bowl and whisk to combine.

In a large bowl whisk the bananas, honey/maple/agave, butter, eggs and vanilla together until well-combined.  Pour the dry ingredients into the banana mixture and stir gently until all ingredients are just incorporated.  Fold in walnuts. Pour into prepared baking pan (and sprinkle the top with whole oats, if desired) and bake for 50-55 minutes or until a toothpick inserted in the center comes out clean.  Let cool before removing from the pan.

Coconut Cashew Bites

If you are a fan of the Larabar you’re going to love these.  After years of buying them I decided to try to make them myself.  The ingredient list on the bars is so minimal I knew it had to be a simple task;  I just couldn’t fathom spending the money on those things.  A couple years ago I began trying different quantities and I think Ive got the perfect combination down. I prefer to roll them into balls because its so much more simple than cutting them into solid bars without crumbling. You’ll almost always find these in our fridge as they are such an easy, quick bite to grab on your way out the door.  And they suffice wonderfully for a sweet fix, too. Continue reading

Baked Coconut Brown Rice

This rice could basically serve as breakfast, dessert or dinner.  It’s rich and sweet with a hint of savory…I can’t tell you how well I devour this stuff.  Serve it for breakfast instead of oatmeal.  Or throw a little ground cinnamon and a tad maple syrup right on top for a healthy, hearty dessert.  But for dinner?  Aye yaye yaye.  It’s the perfect compliment to any meat or veggies from the grill.  Mix the smoky grilled taste with this sweet, creamy side and its a match made in heaven. Favorite Blueberry Muffins

Guys.  I am not one to push advice on others.  Your toes I will never try to step on.  But do me a favor this weekend.  Sleep until your kids or your dog wake you up.  Stay in your jammies until you absolutely need to get ready for the day.  Watch cartoons or your favorite mindless BRAVO show.  Chill out and try your best to relax (and please include cuddles).  And most definitely….absolutely…positively make these muffins (they pair very well with all of the coziness listed above). Listen, friends.  This recipe right here?  Write it down.  Take a picture.  File it away.  Send it to a friend.  I don’t care what you do but just don’t forget about it.  It’s one of my favorite “back pocket” treats.  Yes, its just a brownie.  Thats rich.  And gooey.  And indulgent.  With no refined sugar.  Or flour.  I know!  And the ease?  I literally let Georgia, my almost three year old, make them herself.  Start to finish.  The mess she makes takes longer to clean up than getting them in the oven.  Your new company-stopping-over-at-the-last-minute staple.  Just make sure you remember what you did with the recipe…they’re going to ask you to share it with them.
