Southwest Chorizo and Bean Soup

Well, my guess is, by now,  you have gathered that soups are kind of my thing.  We just click well, for so many reasons.

I love to make them as I go, adding this, that or whatever is left sitting in my fridge or pantry-it’s like piecing together a flavor puzzle; the pieces being whats available in your kitchen.  It teaches me so many dynamics about true cooking. What pairs well together, which flavors and textures don’t mesh.  Soups and stews tend to be my best learned lessons-and provide me my most creative time in the kitchen, which I love. Sweet and Savory Crostini

This was positively not supposed to happen today.  I had a plan.  I am dependent on my plans.   For this, I blame my children.

Pre kids I could’ve won awards for flying by the seat of my pants.  Always down for whatever.  Always willing to juggle around my days.  And top notch at getting side tracked and staying up into the late hours of the evening in order to complete the most important task that needed to be done that day.  Procrastination was a strong suit of mine.  It still is, but there is now a schedule.  That part has just got to stick. Slow Cooker Smokey Ham and White Bean Soup

I’ve got a thing for a good ham and bean soup. It’s old school.  A staple.  Nostalgia central.   It’s like a really fantastic,  super old pair of Chuck Taylors, or that worn in sweatshirt with all the holes in it.  Solid.  Legit. Classic.  Always in style.  So this recipe?  My jam.

I’ve tried simmering this stuff on the stove for hours.  I’ve soaked the beans overnight.  I’ve used beans from a can.   I’ve seared the ham before slow cooking it.  I’ve added roasted garlic.  The list could go on.   I’ve fussed around with ham and bean soup in every way, shape or form and this ridiculous, itty bitty, hardly-any-work-or-ingredients recipe is by far the best I have done to date.   Continue reading

Lentil and Sausage Stew

I may have had MFPD when I threw this stew together.  That’s a thing, right?  Multiple Food Personality Disorder?  You know, when you get cooking and throw a bunch of random ingredients together that aren’t typically supposed to “go” with one another?

Roasted Spaghetti Squash Carbonara

I won’t deny it.  Pasta Carbonara tends to be one of my favorite dishes on the planet when I’m in the mood for comfort.  And my entire family is right there with me, even on picky-eating days.  It’s as indulgent as all get out and I am always able to get it on the table in a matter of minutes which is huge.

But my little unsatisfied food brain got to thinking….if Carbonara is so delicious and weeknight savvy with spaghetti pasta…why the heck couldn’t it be with spaghetti squash?     Continue reading

Pan Roasted Pork Tenderloin with Apples


Any recollection of this Brady Bunch episode where Peter is obsessed with imitating other people? His Humphrey Bogart rocked.  Pork chaaapssh and applesaush. And isn’t it so normal how Carol greets Mike at the door so charismatically with that dress and heels on? That’s EXACTLY what it’s like when my husband gets home from work. Minus the dress and plus some sweatpants. Minus the heels and plus bare feet. And plus screaming kids climbing on me. And usually, hair that’s made it through half of the day but has retired to a top knot because food has somehow nestled it’s way into every strand.
