Grilled Italian Eggplant Rolls

IMG_8285Gorgeous eggplant is popping up all over around here on the farms.  And if you’ve got some finicky eggplant folks blessing your home i feel your pain this recipe just may do the trick and convert them over to the dark purple side.

It’s basically lasagna.  Minus the pasta.  Plus the nutrients.  And about a zillion times more simple to prepare.  I shared them with KARE11 on Friday…so if you’re looking for the recipe or to see me walk through the preparation click here.

  1. Hi Lovely! Do you take the skin off the eggplant and take the seeds out before grilling? My computer is being finicky so I can’t load the video to watch you in action (maybe you answer this for me in the video). Thanks!
