Salmon Grill Packets

Summer. The ‘Dog Days of Summer’. In full effect and simply the best. Lazy pool days, picnic lunches, parks, the lakes and sun, SUN, SUN. Everything tends to run over schedule this time of year for us. Trying to maximize our time outside leads us to later naps and less time to get work done at home. Dinner is usually thrown together minutes before it should be on the table and this makes it a challenge to get a healthy, balanced meal in the books. But hey, I’ll let beef stew and soups simmer another time when that freezing wind is blowing…right now, we belong outside!

This meal is a great way to achieve both taste and nutrition in no more than 15 minutes, start to finish. Theres nothing to it…to be honest, I didn’t get great photos because I was sure this idea was going to be too simple to taste good. I was so very wrong. Throw your ingredients in a piece of foil, wrap it up and throw it on the grill for ten minutes. No prep work. No clean up. A ‘Dog Days’ dinner, indeed.

Salmon Grill Packets

note: if you do not have access to a grill, baking this in the oven should work just as well.

Ingredients

1 (8oz) Salmon Fillets (about 1 inch thick)

2 Tablespoons Olive Oil

1 Tablespoon Butter, cut into 4 cubes

1 Tablespoon Greek Seasoning

2 Cups Baby Spinach Leaves

1 Tomato, roughly chopped

1 Tablespoon Capers

2 Ounces Feta Cheese, crumbled

Cracked Black Pepper

Directions

Preheat the grill to 425. Lay a piece of foil out (large enough to completely wrap your salmon) and drizzle the foil with 1 tablespoon olive oil. Place half the spinach on top of the oil and lay 1 salmon fillet over the spinach. Top with half of the tomato, capers and feta, season with cracked black pepper and place 2 cubes of butter on top. Repeat with the remaining ingredients to make another packet. Fold the foil over the fish and seal closed. Place on the grill for 10 minutes. Serves 4
