Well, guys, I’ve got a little chef in the family. This girl, Georgia. She’s something. She’s SO into helping in the kitchen..it’s annoying amazing. Mom, can I help mix that? Mom, what can I do? Okay mom, are you making dinner? I’ll get my stool. Aye yaye yaye. Continue reading

Coconut Cashew Bites
If you are a fan of the Larabar you’re going to love these. After years of buying them I decided to try to make them myself. The ingredient list on the bars is so minimal I knew it had to be a simple task; I just couldn’t fathom spending the money on those things. A couple years ago I began trying different quantities and I think Ive got the perfect combination down. I prefer to roll them into balls because its so much more simple than cutting them into solid bars without crumbling. You’ll almost always find these in our fridge as they are such an easy, quick bite to grab on your way out the door. And they suffice wonderfully for a sweet fix, too. Continue reading
Asparagus and Pancetta Pasta
Would it be weird to call a dish light and indulgent all at the same time? This pasta is a cinch to get on the table and is full of bright, fresh flavor while still tasting a bit rich. I’ve basically dummied this recipe down out of pure laziness and we love the results. I keep going back to it not only because I can count on everyone enjoying it (my non-asparagus loving daughter actually devours it in here) but because it requires minimal ingredients and couldn’t be more simple to throw together. It’s on the table in 15…total score! Continue reading
Roasted Eggplant Caprese
This Roasted Eggplant Caprese is a cinch to throw together for a simple weeknight meal. If you’re a fan of the Caprese Salad you’re going to dig this variation. It’s light but filling and we think it pairs wonderfully with a grilled steak or fish. Continue reading
Grilled Chicken Fajitas
In honor of Cinco De Mayo I find it only necessary to share with you one of our very favorite “Mexican” recipes. Grilled Chicken Fajitas.
Your belly will think they are as beautiful as your eyes do, friends. Smokey, charred, savory chicken loaded with herbs and spices paired with slightly crisp peppers and onions equal magic on my tastebuds. Continue reading
Asian Tuna Salad
If you recall this salad, I have a few gym cafe obsessions. They are always fairly healthy options that fill you up in a super tasty way. This Asian Tuna Salad is my take on one of their menu items and its nothing short of delicious. The flavors get better as the salad sits so its perfect for making over the weekend and snacking or lunching on throughout the week. Its savory and sweet and full of fresh flavor. Continue reading
Grilled Broccolini with Lemon and Garlic
Well, the infamous USB cord has been found. No, my daughter did not throw it in the trash. No, my son did not flush it down the toilet. My third child wonderful husband put it in his briefcase. Because he just assumed it was one of his. All that garbage digging, brain wracking for nothing, friends. Sometimes you get the bear and sometimes the bear gets you. So as promised, here is the recipe for the grilled broccolini we are so crazy about around here. Its barely a recipe. It barely takes effort or time. But its tastes so darn yummy. Continue reading
Slow Cooker Salsa Verde Pulled Chicken
There are recipes like this floating around all over the internet. Slow cooker southwest chicken in all shapes and forms and I’ve tried so many variations. My sister found this recipe on Pinterest and we couldn’t love it more. I added a few spices because heaven forbid I leave any recipe alone (control issues, friends-Im working on it) but in my opinion the smoked paprika is key…so yummy. I’ll be making this over and over again…the more delicious minimal ingredient, throw-in-the-slow-cooker-and-leave-it-alone-all-day recipes I can keep in my back pocket, the merrier, for sure. This chicken makes awesome quesadillas, tacos, salads and so much more. But piled on top of a crispy tortilla (like in this recipe) with spinach and blazing hot salsa is my very favorite way to eat it. Continue reading
One-Pot Cincinnati Chili
Well, friends. I’m just going to lay it all out there. Consider this a no-judgement zone. Tell me your deepest and darkest secrets….it’s safe here. This is a blog made up of love, compassion and trust between you and I. The tree of trust, lets say. Ate all your kids Easter candy before it made it to the baskets and told yourself it was for their own good? Confess here, you’re in the tree of trust. Do you secretly love the “get cash” option when you are checking out with your Red Card at Target so that you can disguise your coffee addiction? Tree of trust. What? It was just a random guess. I would never do something like that. Friends. My name is Melissa, and I have a major crush on Chef Michael Symon. Continue reading
Potato, Ham and Broccoli Gratin
This number was inspired by an awesome side dish, my sisters “cheesy potato” recipe, on a I-dont-feel-like-cooking kind of day. Because, well, sometimes we need an easy side dish to turn into a complete meal. It’s quite possibly the most effortless dinner to put together in the entire universe and my family goes nuts for it. Cheesy, gooey, comfort mania, right here folks. Continue reading
