How was the weekend?  It’s officially spring, friends..congratulations..you’ve made it!  I’m feeling awfully grateful that ‘technical’ winter is behind us…now if we could just get these temps (and random bouts of snow) out of the equation.

This boring old tomato had been staring me in the eye for days and I finally caved.  I knew it wasn’t the kind of tomato that was worthy of being eaten alone with a little salt.  After all, it is March.  But I needed to utilize it in some way.  So I sliced it up and away to the oven it went for a roast.   Continue reading

Well, my guess is, by now,  you have gathered that soups are kind of my thing.  We just click well, for so many reasons.

I love to make them as I go, adding this, that or whatever is left sitting in my fridge or pantry-it’s like piecing together a flavor puzzle; the pieces being whats available in your kitchen.  It teaches me so many dynamics about true cooking. What pairs well together, which flavors and textures don’t mesh.  Soups and stews tend to be my best learned lessons-and provide me my most creative time in the kitchen, which I love. So, how was it?  Did you go crazy for your kids halloween candy?  My husband did.  I had no part in it.  Except for the DOTS.  And peanut butter cups.  I may have had a Snickers, too.  Or two.

This weekend basically consisted of lots of junk food…pizza, burgers and fries, way too much candy..and not enough sleep.  So, back we are to reality and it feels so very good to have meals at home, sleep schedules for the kids and real-life food in the fridge.  It doesn’t take much for me.  If I’ve got those three things I am ONE HAPPY CAMPER. Slow Cooker Chicken and Poblano Stew

Slow Cookers.  They can be such a time and sanity saver.  But, as you know, I’m really finicky about what I put in them-I believe it’s my controlling food nature.  When I put something in the slow cooker I’ve lost control.  There’s no seasoning as you go, there’s no stirring, there’s no adding this or that.  It’s a hands off,  no-control zone for me.  So recipes I put in mine have to be precise…and special…and worthy.  This ones there.   Continue reading
