I may have had MFPD when I threw this stew together.  That’s a thing, right?  Multiple Food Personality Disorder?  You know, when you get cooking and throw a bunch of random ingredients together that aren’t typically supposed to “go” with one another?

Slow Cooker Beef and Bean Chili

My husband was craving chili big time last week.  And chili is one of those weird things I have a hard time making on any day of the week other than Sunday.  It’s a Sunday food, no?  It needs time to simmer on the stove and smell the house up beautifully while everyone gets cozy and football is blaring in the background.

Slow Cooker Chicken and Poblano Stew

Slow Cookers.  They can be such a time and sanity saver.  But, as you know, I’m really finicky about what I put in them-I believe it’s my controlling food nature.  When I put something in the slow cooker I’ve lost control.  There’s no seasoning as you go, there’s no stirring, there’s no adding this or that.  It’s a hands off,  no-control zone for me.  So recipes I put in mine have to be precise…and special…and worthy.  This ones there.   Continue reading

Beef and Bean Chili

Well, we’ve come and gone from our winter getaway.  Sun, warmth and peace was had and, much to my dismay, winter greeted us back home with a big, fat hello.  Every year we go away around this time.  And every year as we are sitting on the beach the sun soaks all of its optimism into my body. We talk about how the winter will always be so much more bearable if we make it a priority to get away somewhere warm for a short time.  And how we aren’t even sure if we could live in a place so consistently warm all year around.  How much we love the seasons change in Minnesota.   And how our winters are really not that bad.  And then it happens.  The airplane lands back in our home state. Savory Chicken Stew

Hello there!  I apologize for my hiatus this last week.  I am fully aware that excuses are useless but things have been a little nutty around here.  My husband has been traveling the last two weeks and our house has been full of all sorts of crazy…and Im totally over this single parenting thing, it makes me so grateful for the time Nick is home.  Holiday parties, Christmas programs, deadlines, croup, first birthdays, family visits, graffiti on bedroom walls (the culprit shall remain nameless but lets just say that it appears that the year of “3” has started off with quite a bang), meltdowns, deviance, weaning and sleepless nights.  But theres still plenty of merriment around here as things are looking pretty darn good right now.  Daddy is hours away from being home.  Empathy seems to have been implemented into that tiny “3” year old body that I swear I didn’t know.  Sleep has been had the last couple nights.  And Christmas is coming!  We are looking so forward to time with family!

Dinners have been consisting of macaroni and cheese, sandwiches and yes….gingerbread houses.  Sometimes you just go with it, I suppose 😉  But Im putting my foot down.  This Savory Chicken Stew is currently simmering on the stove and I just realized I don’t think I have shared this recipe with you guys.  It’s so very comforting and rich…its a favorite.  Simple, healthy and one pot friendly, to boot. Moroccan Meatball Stew

And so it begins.  Winter.  Snow.  The works.  Business just isn’t as usual around here these days.  Its cold and my laziness begins to sink in.  Some days, taking the extra 20 minutes to get the kids bundled up and out the door just doesn’t sound so appealing so home we stay.  And on those kinds of days, this stew tends to happen.  Its been a very long time favorite of mine.  Super deep, rich flavors and textures galore.  Warmth in a bowl.   I typically make the meatballs in the morning while the kids are playing and keep them in the fridge until I throw the rest together late afternoon; it makes putting the stew together so simple.  And as it simmers the amazing smells soak into every inch of our home…and I always welcome them to stay as long as they would like.  It’s even better leftover, too, but the chances of having leftovers are just not likely.  Serve it on top of brown rice or mashed cauliflower….it’s so incredibly yummy. Savory Beef Stew

Red wine has always been my go to for beef stew…it gives it such a rich flavor.  But as I was putting a pot of stew together this past Sunday I realized we were out of red wine.  And in good old Minnesota there are no liquor stores open on Sundays which left me no option but to try something new…and the only thing  I could come up with that had potential was balsamic vinegar.  Its rich and bold and so savory.  Ill never go back…peace out, red wine.  This is the real deal, right here.  Best beef stew I have ever made.
