Kale with Lemon Cream Sauce

Good old kale.  It’s wonderful.  It’s versatile.  It’s full of so many fantastic nutrients.  The total package.  I’ve always adored it; for salads, wilting into soups and stews and so much more.  But I have got to say this Kale with Lemon Cream Sauce is up there high on my list of very favorite side dishes. Ladies and Gentleman of the Delicious Food Nation please rise…

We are gathered here  today to witness the union of Roasted Chicken, Pomegranate Relish and Tahini Sauce in holy matrimony, which is an honorable estate, that is not to be entered into lightly, but reverently and soberly.  Well, if you want to pair it with a fine white wine that would be okay. Roasted Spaghetti Squash Carbonara

SONY DSC

I won’t deny it.  Pasta Carbonara tends to be one of my favorite dishes on the planet when I’m in the mood for comfort.  And my entire family is right there with me, even on picky-eating days.  It’s as indulgent as all get out and I am always able to get it on the table in a matter of minutes which is huge.

But my little unsatisfied food brain got to thinking….if Carbonara is so delicious and weeknight savvy with spaghetti pasta…why the heck couldn’t it be with spaghetti squash?     Continue reading

Crispy Oven Fish Sticks with Dill Yogurt Sauce

Let’s just get right to it.  I’m not a cod girl.  Never have been, never will be.  It just doesn’t do much for me.  Unless its battered.  And deep fried.  And doused in a lip puckering dunking sauce of deliciousness.  Then I’m a cod girl.

So thats what I’ve done here with this recipe.  I’ve ‘battered’ it.  And ‘deep fried’ it.  And doused it in a lip puckering dunking sauce of deliciousness.  Without truly battering it.  And without deep frying it.  Shh…my family has no idea! Continue reading

Cinnamon Pear Sauce

SONY DSC

So friends, as you may remember, I am a total fan of homemade applesauce.  It’s unbeatable…store bought varieties just don’t compare.  Not to mention when you make it homemade you’re not stripping away a ton of the nutrients through processing and preserving.  I’m just sold on the whole deal, especially considering how simple it is to prepare at home.

Now, theres a couple of kinds of food love, in my book.  Theres being a total fan, as I told you I was of the applesauce in the paragraph above.  And then theres Hallelujah, over the moon, this-is-out-of-control, party-don’t-stop food love.  This Cinnamon Pear Sauce?  I would classify it under the latter.   Continue reading

Quick Bolognese Sauce

SONY DSC

“Spaghetti” doesn’t happen often around here and every time I make this recipe for Quick Bolognese Sauce I ask myself why.  Its like one of those basic recipes that I forget to come back to. But just yesterday, as the leaves began to fall a bit, I took a break from grilling and salads and lightness galore and ended up with this pot of gold on my stove. Continue reading

Grilled Kafta with Yogurt Sauce

All kinds of greed enters my body when I am faced with this stuff, you guys.  The rich flavor.  The brightness.  The textures.  The sauce dripping down my hand as I shovel it in.  Hail to the Kafta, I do.   Continue reading

If you’re up for making a 10-minute, tops, start-to-finish- dessert that tastes simply decadent this ones for you.  I shared my new favorite method for getting a fun summer treat on the table in a flash on KARE11 yesterday and I must say it was quite the hit with the crew.  And let me tell you, my family definitely did not mind all of the practice rounds I did trying to get this recipe just right either.  I hope you enjoy this one…it’s such a yummy treat and perfect for entertaining; its quite the conversation piece!   Continue reading

Burger with Over-Easy Egg and Sriracha Sauce

SONY DSC

Guys…I’m just not sure what to write. What do you want me to say?  That this is the most awful burger I’ve ever put in my mouth?  That I’d positively never, EVER advise you to eat such a disgrace? That the spicy, creamy sauce is a joke…and that teaming it up with a grilled burger, gooey, rich egg yolk and a juicy tomato is just disgusting?  Well thats surely not going to happen.  It’s pure heaven in my belly, people. PURE.  HEAVEN. Continue reading
