You guys, this weather we are having around here! It’s COLD! Gorgeous, but man does that change in temp feel like a chill or what? It’s pretty much the best kind of weather. You know, the kind of weather where it’s not too cold to sleep with your windows open…but them when you wake up in the morning you can’t possibly seem to peel yourself out of those perfectly warm, cozy covers because your room has an insane chill going through it.
We have been comfort-fooding around here like crazy people lately. It must be the weather. And these Quick-Chili Loaded Baked Potatoes made the roster. It’s funny. Sunday, in my brain, is supposed to be for ‘Sunday Meals’. You know, the fancy, time-consuming meals you can’t get accomplished during the week. But rarely does it end up being that way around here. Sunday is typically the day I go out during nap time and get my meal plan/shopping done for the week. It sounds silly, but that little mission takes time, so I am always rushing back home to get dinner on the table before it’s too late. Sunday dinners usually need to be low maintenance and ultra quick for me. Praise the Lord, it’s grilling season! Many nights, as our protein is cooking away outside, these potatoes are in the oven smelling our house up just wonderfully. They’ve got a crispy texture on the outside with a soft, warm center and the sweet and smokey combination is such a winner. Sometimes the most simple dishes yield the most sophisticated flavor…and this is one of those. What’s your favorite go-to grilling side? Share the wealth, my friends!
Sweet and Smokey Roasted Potatoes
1 Pound Sweet Potatoes, peeled and cut into 1-2 inch pieces
1 Pound Baby Red Potatoes, cut into 1-2 inch pieces
3 Tablespoons Olive Oil
1 Teaspoon Salt
1 Tablespoon Chili Powder
Preheat oven to 425. Place the potatoes on a large baking sheet, drizzle with olive oil, sprinkle with salt and chili powder and toss well to coat. Spread them out into an even layer and roast, in the oven, for 35-45 minutes or until they begin to crisp up, flipping once in the middle of cooking. Serves 4-6
