“Mexican Street Taco” Lettuce Wraps

Just in time for Cinco De Mayo, dear friends! At first I thought, Who really needs another taco recipe? But I answered myself with Everyone! Everyone on this glorious planet needs another taco recipe, obviously! I mean, can you ever really have too many? Not if your family is anything like my Mexican-loving one.

But this one? This recipe? It trumps all. I’m proclaiming that these are MY FAVE TACO that’s ever come out of this kitchen. Shouting it from a mountaintop. And I’ve got a few good reasons  Continue reading

Blackened Steak Lettuce Wraps with Chipotle Lime Sour Cream

SONY DSCYou guys, the weather around here has been straight up INSANE…and I mean that in the best way possible!  It’s February.  And we have gone to the park nearly every day for the last week, no joke.  Almost every bit of the snow is melted, the sun has been working overtime and there are literally birds chirping.  Can I get allllll the virtual high fives and happy dances from you!?  So let’s  celebrate this spring-like feeling by eating spring-like…at least until we get hit with that snow storm thats in the forecast for this week. Only in Minnesota, my dear friends.  The land that I love ;)

These lettuce wraps are pretty much the whole shebang.  The flavors are so bright and fresh.  So much, that you wont even miss the tortilla one bit; it would just take away from all of the goodies inside!   Continue reading

Slow-Cooker Cream Cheese Chicken Enchilada Cups

SONY DSCHow much do you love appetizers?  Give them to me for every meal, friends.  There’s really nothing like trying a bunch of different small bites.  And with the Super Bowl coming up I think these little Enchilada Cups are going to come in pretty darn handy.

We made these just last night for dinner.  I wanted to come up with an appetizer recipe to share with you guys that would be just perfect for you to share with friends for Sunday’s big game.  I’m pretty sure I accomplished my goal…but turns out they make a pretty stellar dinner, too.  My kids devoured them and requested they be added to the “make-often-because-these-are-our-favorite” list, which is pretty much music to my ears.  And I would feel safe assuming Nick and I could win awards for our ability to consume large amounts of these as well; so stinking yummy! Quick + Easy Garden Fresh Salsa

SONY DSC

There really is no excuse not to make this stuff.  It takes about as much time as it takes to open up a jar of salsa from the market and, well, I don’t need to tell you how the taste compares, right?

We all know how delicious fresh salsa is.  And when the tomatoes, peppers and onions are as fresh and perfect as it comes it really is just the most unbeatable condiment on the planet, in my humble opinion.  Gobs of garlicky, acidic, sweet, spicy flavor…yes, please, I’ll go right ahead!  Continue reading

Cheesy Mexican Zucchini Boats

SONY DSC

Truth:  my family has about had it with zucchini, I am afraid.  As promised, I am dedicating this entire week on the blog to zucchini-because man, it’s everywhere and it’s just got to be utilized.  So, as one would assume, I have been testing zucchini recipes left and right in my kitchen for the last couple of weeks.  Some failed miserably, some were just mediocre, and some wowed us and actually convinced me that my children like zucchini; these Cheesy Mexican Zucchini boats were one of those.

SONY DSC

I shared the recipe on KARE11 a couple of days ago and it was such a great time.  I always love spending afternoons around there-the people are just so darn friendly, the work space is so far beyond most local TV station kitchens, and it’s a total excuse for me to get out and ‘work’ outside of my own kitchen; so fun!  Click here to see the video if you didn’t catch it. I’m happy to say the recipe was totally loved by all! Continue reading

One-Pot Southwest Chicken and Rice

SONY DSC

Far, far, FAR too often I end up with boneless, skinless chicken breasts in my fridge with no plan in sight.  Then, what happens is I avoid them…like the plague.  They sort of bore me and man is it easy to fall into ruts of grilling or pasta-ing them.  No clue why I continue to put them in my cart at the beginning of the week but I do…likely because they force me to get creative.  So the end of the week comes and all I’ve got left in the fridge is those poor little chick-a-dees and a bunch of randomness in the veggie drawer, freezer and pantry to work with.  Continue reading
