All kinds of greed enters my body when I am faced with this stuff, you guys. The rich flavor. The brightness. The textures. The sauce dripping down my hand as I shovel it in. Hail to the Kafta, I do. Continue reading

Grilled Asian Sesame Chicken Thighs
Chicken thighs tend to get shoved in a corner and for no good reason at all. They are total gems of the chicken world, in my opinion. They don’t dry out like white meat. They are tender, full of juice, totally affordable and so quick to cook. Just a few of the many reasons this dish is a favorite of mine. Continue reading
Grilled Banana Bread with Warm Maple Butter Sauce
If you’re up for making a 10-minute, tops, start-to-finish- dessert that tastes simply decadent this ones for you. I shared my new favorite method for getting a fun summer treat on the table in a flash on KARE11 yesterday and I must say it was quite the hit with the crew. And let me tell you, my family definitely did not mind all of the practice rounds I did trying to get this recipe just right either. Parmesan + Goat Cheese Grilled Zucchini Boats
My husband? He’s pretty amazing. Sensitive. Kind. Strong. Intelligent. Nearly the whole shebang, that Nickyboy is. But a zucchini lover he is not…it’s the texture. I can let the toilet seat thing go. The all-too-often-frat-house-vibe I get from living with him, fine, I’ll get over it (please, just put the toilet seat down. And the toothpaste…just clean the remains out of the sink before you finish!) But the lack of love for a little tiny thing called ‘summer squash’ that is very near and dear to my heart? I can’t. I won’t. This is a part of our marriage…for better or for worse. You’ve committed to me? You’ve committed to summer squash. Have I mentioned that he’s passed this turn-your-nose-up mentality of it on to my daughter? Oy vey. I’m in trouble. Continue reading
Grilled Chicken, Roasted Tomato and Goat Cheese Flatbreads
Boy have I missed you guys. Have you been enjoying this crazy-wonderful weather? This time of year…I just can’t get enough. We’ve been trying our best to soak in all of this sunshine…swimming, farmers-marketing, park-hopping, festival-ing and patio dining galore. It’s definitely all sunshine and rainbows…but it doesn’t leave me much time in the kitchen for dinner prep. These flatbreads have become quite the time-saver around here…and I can’t even begin to tell you how absolutely amazing they taste. Continue reading

Sweet and Smokey Pork Tenderloin Skewers
Alright, friends. We are going to have a little chat. Are you comfy with your grill? Do you use it? I have talked to so many of you lately that are intimidated by the grill and my current mission in life is to make that go away as quickly as possible. Please, all I ask is for you to learn how to start up your grill. Thats it. Thats all you need.
Grilling is a giant time saver for me during these warmer months. You throw your food on for a super quick sear and really, thats it. Starting your grill is the most difficult part and once you have that figured out you’re left with nothing but charred, smokey, fresh flavor for the rest of the season. Think of it as cooking on your stove with a cast iron skillet or really hot pan. Only outside. Can you beat that? I think not. Continue reading
Grilled Chicken Fajitas
In honor of Cinco De Mayo I find it only necessary to share with you one of our very favorite “Mexican” recipes. Grilled Chicken Fajitas.
Your belly will think they are as beautiful as your eyes do, friends. Smokey, charred, savory chicken loaded with herbs and spices paired with slightly crisp peppers and onions equal magic on my tastebuds. Continue reading
