You guys, the weather around here has been straight up INSANE…and I mean that in the best way possible! It’s February. And we have gone to the park nearly every day for the last week, no joke. Almost every bit of the snow is melted, the sun has been working overtime and there are literally birds chirping. Can I get allllll the virtual high fives and happy dances from you!? So let’s celebrate this spring-like feeling by eating spring-like…at least until we get hit with that snow storm thats in the forecast for this week. Only in Minnesota, my dear friends. How much do you love appetizers? Give them to me for every meal, friends. There’s really nothing like trying a bunch of different small bites. And with the Super Bowl coming up I think these little Enchilada Cups are going to come in pretty darn handy.
We made these just last night for dinner. I wanted to come up with an appetizer recipe to share with you guys that would be just perfect for you to share with friends for Sunday’s big game. I’m pretty sure I accomplished my goal…but turns out they make a pretty stellar dinner, too. My kids devoured them and requested they be added to the “make-often-because-these-are-our-favorite” list, which is pretty much music to my ears. Friends! Hello! How are we? We’ve nearly made it through January, the most grey month of the year, in my opinion…so the rest is all downhill from here, right? We just returned home from a vacation with my entire side of the family you guys….what a way to break up the month. We had such a great time and enjoyed the warm weather of the Bahamas so incredibly much. And now…back to good old reality. But gosh I have to admit, a solid routine and well rested kids feels pretty dang good.

Boy oh boy it’s been a while. How was your long weekend? As I told you last time we chatted, we took a little road trip to visit my family down in Iowa and Nebraska and I couldn’t have asked for a better way to close out the summer. It was time so well spent…with my parents, my siblings and their families. Late nights, early mornings, donuts, happy kiddo giggles, mama’s homecooking, pool parties, coffee, pedicures…I mean it was just plain wonderful. And now…school begins! What a way to head into a new year, hearts full as all get out.
And as you may know, somehow, magically, each year as summer begins to slip away my seasonal cooking-brain goes right with it. It’s incredible how it happens so organically. Suddenly I begin craving warm food….my tummy just begins to tire a bit of all of the cool, crisp, fresh fare. A couple of months ago I had the honor of attending the launch of the James Beard Foundations Blended Burger Project here in Minneapolis. The blended burger initiative aims to influence chefs to incorporate mushrooms into burger recipes, both for sustainability and health benefits. Makes perfect sense to me. And the coolest part is that this movement is being welcomed and respected to no end. From elite restaurants to classic burger joints, these blends are showing up on menus all around the world. And get this, schools throughout the country have incorporated blended burgers into their menus. Can you imagine? It’s time for change, friends, and I suppose we could start one household at a time. It’s funny. Sunday, in my brain, is supposed to be for ‘Sunday Meals’. You know, the fancy, time-consuming meals you can’t get accomplished during the week. But rarely does it end up being that way around here. Sunday is typically the day I go out during nap time and get my meal plan/shopping done for the week. It sounds silly, but that little mission takes time, so I am always rushing back home to get dinner on the table before it’s too late. Sunday dinners usually need to be low maintenance and ultra quick for me.
