Waverunner Chicken with Citrus Salsa and Coconut Brown Rice

SONY DSCI don’t even know where to begin, you guys.  I made this dish a while back and I am literally about ready to jump through the screen in an attempt to devour these photos because I want to eat this again immediately.  Incredible.  Just incredible.

Now let’s just start from the beginning, okay?  Urban Halo…yes?  No?  If you haven’t…you are welcome for the introduction, and I apologize for your addiction all at the same time.  I’ve been a fan of this company and their headbands for a solid couple of years and for so many valid reasons…it’s local, started by a fellow mama like myself who was looking to create the most stylish, functional headbands on the planet and I’m pretty sure she has accomplished her mission.  These are my gym bff (and they don’t slip!!!)..and they are cute and comfy enough to keep on all day long after my workout.  Also, pretty much my saving grace on those rush-out-the-door mornings with no time to do my hair.  Not to mention Georgia is also obsessed..and man do they look cute on a silly little five year old, too.  So fun to share my stash with her! SONY DSCFriends!  Hello!  How are we?  We’ve nearly made it through January, the most grey month of the year, in my opinion…so the rest is all downhill from here, right?  We just returned home from a vacation with my entire side of the family you guys….what a way to break up the month.  We had such a great time and enjoyed the warm weather of the Bahamas so incredibly much.  And now…back to good old reality.  But gosh I have to admit, a solid routine and well rested kids feels pretty dang good.

Spinach, Broccoli + Farro Salad

SONY DSCGood day, friends!  I hope your weekend was what a long-Thanksgiving weekend should be…relaxing, fun and yummy-food-filled!  And now, back to the grind.  But let me tell you, this salad is a mighty fine way to start that grind.

If we are Instagram buddies you may have seen my recent obsession with the Kale + Broccoli Salad from Lunds and Byerlys, a local grocer around these parts.  And you guys, the obsession is legit.  LE-GIT.  You know I’m a sucker for super-grain farro to begin with, especially in salad form.   But besides my beloved farro, this salad just has gobs of goodies in it:  kale, broccoli, parmesan, apricots, sun dried tomatoes.  Weird combo, no?  No!  You wont believe what that flavor/texture hodge podge does…it will knock your socks off!  Continue reading

Quick-Chili Loaded Baked Potatoes

You guys, this weather we are having around here!  It’s COLD!  Gorgeous, but man does that change in temp feel like a chill or what?  It’s pretty much the best kind of weather.  You know, the kind of weather where it’s not too cold to sleep with your windows open…but them when you wake up in the morning you can’t possibly seem to peel yourself out of those perfectly warm, cozy covers because your room has an insane chill going through it.

We have been comfort-fooding around here like crazy people lately.  It must be the weather.  And these Quick-Chili Loaded Baked Potatoes made the roster.  I feel like I say this a lot, mostly because I only tend to share the recipes that get my family’s stamp of approval, but these are definitely a favorite among the kiddos. Sweet and Sticky Salmon + Coconut Rice Bowls

Guys, you know I love a good Asian dish.  And you know that my husband is a bit meh about that whole deal-he’s an Italian food junkie.  But these salmon and rice bowls?  His fave.   Totally worthy of your meal rotation, promise!

The coconut rice is a total winner around our home.. .my kids adore it and it pairs wonderfully with basically any protein.  So I started these bowls with a base of that sweet, perfectly cooked rice.   Continue reading

The Maverick Blended Burger

SONY DSCA couple of months ago I had the honor of attending the launch of the James Beard Foundations Blended Burger Project here in Minneapolis.  The blended burger initiative aims to influence chefs to incorporate mushrooms into burger recipes, both for sustainability and health benefits.  Makes perfect sense to me.  And the coolest part is that this movement is being welcomed and respected to no end.   From elite restaurants to classic burger joints, these blends are showing up on menus all around the world.  And get this, schools throughout the country have incorporated blended burgers into their menus.  Can you imagine?  It’s time for change, friends, and I suppose we could start one household at a time.   Continue reading

Parmesan Crusted Zucchini Bites

So I think my family has fully recovered from the zucchini overload that transpired a few weeks ago.  I’ve learned that putting them through the hells of zucchini recipe testing for a couple of weeks actually isn’t too bad of a tactic to get them to completely appreciate all of the other veggies out there.  Lately I’ve been hearing things like We aren’t having zucchini?  We’re having broccoli?  YESSSS!!!  So really, we are all sort of winning here.

But this Parmesan Crusted Zucchini Rounds recipe shouldn’t even technically count as zucchini.  Fried cheese? Now that’s more like it. Continue reading

Baked Shrimp with Tomatoes and Feta

Happy Tuesday, friends!  Nothing like a little healthy ditty like this Baked Shrimp with Tomatoes and Feta to get things moving…and so  quick, to boot!

Again, here, I hail the ripe tomato.  I just can’t stop.  They are so lovely and sweet right now and I want to utilize them in any way I am able before they are no more….what a sad day that will be.

This is such a simple recipe that includes a whole lot of freshness.  The sweet, acidic tomatoes and white wine make just the most perfect, bright, simple sauce for the shrimp; and you better grab some crusty bread for sopping up all of that juice, its a must.   Continue reading
