So you may remember this mess of an experience I had trying to create a solid “crumble” recipe.  It failed.  And that was most definitely not my first and last attempt at getting it right.

But finally, I am satisfied.  I surrender to the fruit crumble madness that has taken over my home.  Which is, likely, a good thing.  My children aren’t too thrilled about it, but any more taste testing of these different recipes and chances are they’d turn into walking, crumbly, fruit humans. Blackberry Oat Breakfast Bars

Asparagus and Pancetta Pasta

Would it be weird to call a dish light and indulgent all at the same time?  This pasta is a cinch to get on the table and is full of bright, fresh flavor while still tasting a bit rich.  I’ve basically dummied this recipe down out of pure laziness and we love the results.  I keep going back to it not only because I can count on everyone enjoying it (my non-asparagus loving daughter actually devours it in here) but because it requires minimal ingredients and couldn’t be more simple to throw together.  It’s on the table in 15…total score! Baked Coconut Brown Rice

This rice could basically serve as breakfast, dessert or dinner.  It’s rich and sweet with a hint of savory…I can’t tell you how well I devour this stuff.  Serve it for breakfast instead of oatmeal.  Or throw a little ground cinnamon and a tad maple syrup right on top for a healthy, hearty dessert.  But for dinner?  Aye yaye yaye.  It’s the perfect compliment to any meat or veggies from the grill.  Mix the smoky grilled taste with this sweet, creamy side and its a match made in heaven. Weeknight Gyro Bowls

Have we shared gyro love stories in the past?  I don’t recall.  But if you are reading this I have a good feeling our taste buds are a match made in heaven…and if that is, in fact, the case, there’s a good chance you have a slight adoration for the gyro sandwich.  Our favorite in our neighborhood comes from this joint.  Yes, my friends, you will arrive at a  gas station.  And you will walk right past the gas pumps and in through those old, worn doors into a convenience store that has a few shotty tables sprinkled in among a a sparse inventory of mediterranean groceries and a kitchen that pumps out some of the best gyros around.  Its a hole-in-the-wall.  A gem.  And our go-to for a majority of the times we eat out with the kids.  It’s my kind of spot, without a doubt.

I don’t make gyros at home because I just can’t compete with theirs.  But this recipe for Weeknight Gyro Bowls gives me the same flavors right in the comfort of my own kitchen.  Aside from the fact that they taste top notch…they’re so very healthful and fast to make.  You’ll get them on the table in way less than 30 minutes, start to finish. Favorite Blueberry Muffins

Guys.  I am not one to push advice on others.  Your toes I will never try to step on.  But do me a favor this weekend.  Sleep until your kids or your dog wake you up.  Stay in your jammies until you absolutely need to get ready for the day.  Watch cartoons or your favorite mindless BRAVO show.  Chill out and try your best to relax (and please include cuddles).  And most definitely….absolutely…positively make these muffins (they pair very well with all of the coziness listed above).
