I sit here today with a big fat leftover bowl of this on my lap and a giant forkful in my mouth. It’s a good thing this blogging deal isn’t live and in video…you would question so very many things about me; including but not limited to: my upbringing (potentially questioning whether or not I was raised by wolves), if, in fact, I actually feed myself real human food on a regular basis (because the shoveling would lead one to believe genuine starvation could be a factor in this picture) or, if I treated myself to take out for lunch (from a very fresh, hip, homegrown-type of joint). This was positively not supposed to happen today.  I had a plan.  I am dependent on my plans.   For this, I blame my children.

Pre kids I could’ve won awards for flying by the seat of my pants.  Always down for whatever.  Always willing to juggle around my days.  And top notch at getting side tracked and staying up into the late hours of the evening in order to complete the most important task that needed to be done that day.  Procrastination was a strong suit of mine.  It still is, but there is now a schedule.  That part has just got to stick. ‘The Nutty Bird’ Sandwich

So there’s this adorable coffeeshop called Pierce Street Coffeworks in the town I grew up in.  Many of our “half days” of highschool ended with lunch at this cute little spot-which, now that I think back, was nearly 17 years ago…what?! Can somebody please recalculate and tell me I’m wrong here?

On top of great coffee the atmosphere was full of art and color…and the sandwiches on the menu were pretty stellar, too.  The Nutty Bird used to be my go-to.  So so delish.  And every year on the day after thanksgiving I use my leftovers to take me back to that place of nostalgia.  Oh my is it yummy.   Continue reading

Asian Steak and Cabbage Bowl

So, how was it?  Did you go crazy for your kids halloween candy?  My husband did.  I had no part in it.  Except for the DOTS.  And peanut butter cups.  I may have had a Snickers, too.  Or two.

This weekend basically consisted of lots of junk food…pizza, burgers and fries, way too much candy..and not enough sleep.  So, back we are to reality and it feels so very good to have meals at home, sleep schedules for the kids and real-life food in the fridge.  It doesn’t take much for me.  If I’ve got those three things I am ONE HAPPY CAMPER. Let’s just get right to it.  I’m not a cod girl.  Never have been, never will be.  It just doesn’t do much for me.  Unless its battered.  And deep fried.  And doused in a lip puckering dunking sauce of deliciousness.  Then I’m a cod girl.

Cheesy Beef Enchiladas

So, I’ve never made genuinely homemade enchiladas.  Yes, I’ve put together a pan of these Mexican delights with a jar of store bought enchilada sauce but they are always just mediocre.  Homemade enchilada sauce always seemed so intimidating.
