“Mexican Street Taco” Lettuce Wraps

Just in time for Cinco De Mayo, dear friends! At first I thought, Who really needs another taco recipe? But I answered myself with Everyone! Everyone on this glorious planet needs another taco recipe, obviously! I mean, can you ever really have too many? Not if your family is anything like my Mexican-loving one.

But this one? This recipe? It trumps all. I’m proclaiming that these are MY FAVE TACO that’s ever come out of this kitchen. Shouting it from a mountaintop. And I’ve got a few good reasons  Continue reading

Quick Grilled Fish + Pineapple Tacos with Chipotle Sour Cream

I’m always looking for a way to switch up taco Tuesday around here. And here is a quick favorite these days.

While the chipotle sour cream is such a cinch to make, preparing it over the weekend can make this meal so weeknight friendly with hardly any prep at all. The combination of smokey grilled fish, sweet, lightly charred pineapple, crunchy cabbage and chipotle sour cream is seriously so dreamy you guys!  Continue reading

Slow Cooker Chicken and Poblano Stew

SONY DSC

Slow Cookers.  They can be such a time and sanity saver.  But, as you know, I’m really finicky about what I put in them-I believe it’s my controlling food nature.  When I put something in the slow cooker I’ve lost control.  There’s no seasoning as you go, there’s no stirring, there’s no adding this or that.  It’s a hands off,  no-control zone for me.  So recipes I put in mine have to be precise…and special…and worthy.  This ones there.   Continue reading

Cheesy Beef Enchiladas

SONY DSC

So, I’ve never made genuinely homemade enchiladas.  Yes, I’ve put together a pan of these Mexican delights with a jar of store bought enchilada sauce but they are always just mediocre.  Homemade enchilada sauce always seemed so intimidating. So time consuming.  But after a little trustee old interweb research I finally found a super simple method that blows any store bought sauce out of the water.  Thank you, Emeril Lagasse.  From the bottom of my Mexican-food-loving heart.   Continue reading
