Waverunner Chicken with Citrus Salsa and Coconut Brown Rice

SONY DSCI don’t even know where to begin, you guys.  I made this dish a while back and I am literally about ready to jump through the screen in an attempt to devour these photos because I want to eat this again immediately.  Incredible.  Just incredible.

Now let’s just start from the beginning, okay?  Urban Halo…yes?  No?  If you haven’t…you are welcome for the introduction, and I apologize for your addiction all at the same time.  I’ve been a fan of this company and their headbands for a solid couple of years and for so many valid reasons…it’s local, started by a fellow mama like myself who was looking to create the most stylish, functional headbands on the planet and I’m pretty sure she has accomplished her mission.  These are my gym bff (and they don’t slip!!!)..and they are cute and comfy enough to keep on all day long after my workout.  Also, pretty much my saving grace on those rush-out-the-door mornings with no time to do my hair.  Not to mention Georgia is also obsessed..and man do they look cute on a silly little five year old, too.  So fun to share my stash with her! One Pan Lebanese Chicken + Lentil Pilaf

SONY DSCI have been hardcore craving Lebanese food.  And I’m not talking just a yummy shawarma I can get from a local food truck.  I want the real deal…mamas cooking, preferably.  The authentic flavors, the comfort, all of it.  So I did a little playing around in my kitchen this past week and man have I seen the light!

This One Pan Lebanese Chicken and Lentil Pilaf is not a traditional Lebanese dish.  It is a lazy-cooks version of a couple of dishes combined and can I just say that it’s the best lazy-move I may have ever made in the kitchen?  The most tender, flavorful chicken paired with a savory lentil pilaf is a match made in heaven.  Continue reading

Sweet and Sticky Salmon + Coconut Rice Bowls

Guys, you know I love a good Asian dish.  And you know that my husband is a bit meh about that whole deal-he’s an Italian food junkie.  But these salmon and rice bowls?  His fave.   Totally worthy of your meal rotation, promise!

The coconut rice is a total winner around our home.. .my kids adore it and it pairs wonderfully with basically any protein.  So I started these bowls with a base of that sweet, perfectly cooked rice.   Continue reading

One-Pot Southwest Chicken and Rice

Far, far, FAR too often I end up with boneless, skinless chicken breasts in my fridge with no plan in sight.  Then, what happens is I avoid them…like the plague.  They sort of bore me and man is it easy to fall into ruts of grilling or pasta-ing them.  No clue why I continue to put them in my cart at the beginning of the week but I do…likely because they force me to get creative.  So the end of the week comes and all I’ve got left in the fridge is those poor little chick-a-dees and a bunch of randomness in the veggie drawer, freezer and pantry to work with.  Continue reading

Thai Chicken Pineapple Kabobs with Coconut Rice

Right here we’ve got a bunch of my favorite flavors all muddled into one fabulous, stand-out meal.  The tiny bit of peanut butter in the marinade takes the flavor of this juicy, smokey chicken straight over the top….the pineapple adds the perfect hint of sweet acid and the coconut rice just simply turns this number into a home run.  So yum.

Baked Coconut Brown Rice

This rice could basically serve as breakfast, dessert or dinner.  It’s rich and sweet with a hint of savory…I can’t tell you how well I devour this stuff.  Serve it for breakfast instead of oatmeal.  Or throw a little ground cinnamon and a tad maple syrup right on top for a healthy, hearty dessert.  But for dinner?  Aye yaye yaye.  It’s the perfect compliment to any meat or veggies from the grill.  Mix the smoky grilled taste with this sweet, creamy side and its a match made in heaven.
