If you have been following along here for a while you have probably realized that refined sugar and flour recipes don’t come around Nourished Peach much.  Quite frankly, this could be the very first one I have ever written about.  But just hear me out.

We eat well.  And by we, I mean my family at home and you, my NP family.  We do, we pack our every day diets with color and nutrients and protein and diversity.   Not because we want to see the scale drop or because we are trying to stay hip to new diet trends; because we care for our bodies, we care about the food we eat and because we get pleasure from gorgeous, enjoyable meals.  Food, with NP, is not only about fueling our bodies.  It’s about seriously enjoying the process of preparing the food and the gratification of the finished, delicious product.  And more than anything, to me, it is about sharing that finished product with the people I love most.  It’s about feeding bellies and souls.  Cooking is my favorite way to show love, and enjoying a meal with my friends and family is my favorite way to spend time.   Having all of those wonderful reasons we eat well allows us the ability to avoid diet rollercoasters, deprivation and unhealthful relationships with food.   Continue reading

Quick + Easy Garden Fresh Salsa

There really is no excuse not to make this stuff.  It takes about as much time as it takes to open up a jar of salsa from the market and, well, I don’t need to tell you how the taste compares, right?

Grilled Chicken Mediterranean Bowls

Summer is officially halfway over you guys.  Each year around this time I seem to begin easing into fall mindset; it’s a  point of bittersweetness thinking about what’s shortly ahead.

School.  Structure.  Less daylight.  Earlier bedtimes.  More responsibility.  And quite honestly, each time around this year, that all tends to sound slightly appealing to me.  As much as I adore our summers here in MN, the fall brings so much wonderful newness.  The scenery is impeccable.  The crisp air and lack of mosquitos are like a dream.  The kids getting into a new routine and their utter excitement about school is so uplifting.  And schedules…you know I love a solid, predictable schedule 😉

But before all of that comes, while things are still warm and sticky and loosey-goosey, please, please, I beg you, do me a favor?  Celebrate these last days of summer in your kitchen and make this dish.  It’s sheer delight; summer at its very very very finest.  And if you have even the slightest love for Mediterranean flavor, this is absolutely for you. Cheesy Mexican Zucchini Boats

Truth:  my family has about had it with zucchini, I am afraid.  As promised, I am dedicating this entire week on the blog to zucchini-because man, it’s everywhere and it’s just got to be utilized.  So, as one would assume, I have been testing zucchini recipes left and right in my kitchen for the last couple of weeks.  Some failed miserably, some were just mediocre, and some wowed us and actually convinced me that my children like zucchini; these Cheesy Mexican Zucchini boats were one of those.

I shared the recipe on KARE11 a couple of days ago and it was such a great time.  I always love spending afternoons around there-the people are just so darn friendly, the work space is so far beyond most local TV station kitchens, and it’s a total excuse for me to get out and ‘work’ outside of my own kitchen; so fun!  Click here to see the video if you didn’t catch it. Pasta + Zucchini Carbonara

I’ve assumed for a very long time that everyone makes Pasta Carbonara.  Without a recipe, just by use of memory and repetition. As if it is one of their kitchen staple dishes that they go to when in doubt and in pinch.  And when they are strapped for time and need the worlds fastest dinner on the table. Because thats absolutely how it is for me. Grilled Chicken Summer Clubs with Garlic Mayo Sauce

Well, folks, my lovely oven is not working…it’s been a sad couple of days.  But you know what?  If my oven is going to go on strike it couldn’t have picked a better week for such a catastrophe.  It’s hot outside.  Like, reeeeaaaaalllyy, really sticky hot.  There is just no way I would be using the oven in this heat, that I can assure you.  So with the heat, and an oven thats waiting for the doctor to arrive, the grill saves the day!

Cherry Lime Mojito

Well.  I’ve been sitting here pondering what to call this recipe.  Picture this:  my husband and I are both on the couch.  I’ve got the laptop, well, in my lap as it should be, and he is reading Lord knows what on his phone.  He looks at me: what are you stuck on?  Me:  I’m trying to figure out what I should call those drinks.  Nick:  a summer slurpee?  

So, theres a couple of reasons I didn’t go for his suggestion. First off, we certainly don’t run a 7-11 out of my kitchen, as much as I love the thought of that.  Second, its not 1987.   I didn’t just get back from riding my bike to the gas station up the road to spend all of my hard earned allowance on a cherry icey and Big League Chew.  This recipe must never be called a Slurpee of any sort.   Lets go ahead and give him an A for effort, but clearly I’m on my own with this one.

Easy Grilled Pork Chops + Pineapple Salsa

Wow, we haven’t chatted for a while, friends.  My deepest apologies.  We left for a little family reunion late last week and I had every intention of touching base with you while we were on the road.  But, you know.  A couple of kids, 2 hours of rush hour traffic followed by a 3.5 hour road trip sort of got the best of me.  Then, as we were on our way, I thought, you know what, Ill wake up early one day over the weekend and write a quick blog post before everyone rolls out of bed”.  Haha.  My heart was there, I can assure you of that.  Execution, not so much.   Continue reading
